Abstract
本发明公开了一种牛大力植物能量功能饮料,包括牛大力提取液、人参、枸杞、甘草提取液、甜味剂、防腐剂;其制备方法包括以下步骤:1)牛大力提取液的制备;2)甘草提取液的制备;3)调配:取步骤1)和步骤2)得到的牛大力提取液和甘草提取液,加入甜味剂、防腐剂进行调制,杀菌消毒后得牛大力饮料;本发明利用牛大力提取液和甘草提取液制备牛大力饮料,利用牛大力和甘草之间的伍配,制备方法上的改进,使得制备的牛大力饮料既能开发牛大力的食用价值,又能为饮用者提供营养和口感兼具的牛大力饮料。本发明中加入牛大力、蜂蜜、柠檬酸,使本产品的口味更好、饮用后能够具有抗疲劳,快速恢复体力,提神醒脑,能让人保持较好的精神状态之功效。

技术领域
本发明涉及饮料制备工艺,尤其涉及一种牛大力植物能量功能饮料及其制备方法。
背景技术
牛大力(radix millettiaspeciosae)为豆科崖豆藤属植物美丽崖豆藤(millettiaSpeciosa Champ)的干燥根,别名大力牛、扒山虎、血藤、金钟根、倒吊金钟、甜大力牛等,其性味甘、平,归肺、脾肾经,有补虚润肺、强筋活络之功,用于病后虚弱、阴虚咳嗽、腰肌劳损、遗精、白带等症状。牛大力用药历史悠久,《生草药性备要》记载其:“壮筋活络,补虚润肺。治腰腿痛,风湿痹痛,慢性肝炎,肺结核”。《陆川本草》也记载其:“清肺止咳,清凉解毒,治咳血,痢疾,温病身热口渴,头晕”。70年代开始作为壮腰健肾丸、强力健身胶囊等的原料用于中成药生产,在两广地区广泛应用,作为岭南地区药食两用植物。现代药理研究表明,牛大力具有多种药理活性,概括起来讲,目前已公开的文献报道的药理作用如下:

以上研究提示,牛大力具有调节免疫、抗氧化、抗肿瘤、抗炎、祛痰、镇咳、保肝、DNA防护和保鲜等作用。目前,尚未见牛大力抗疲劳方面在临床上应用的研究报道。
疲劳作为一种生理现象,是指机体生理过程不能持续其机能在某一特定的水平和/或不能维持预定的运动强度。从生物化学角度来看,产生疲劳的原因:一是由于运动时能力体系输出的最大功率下降:二是由于肌肉力量下降或内脏器官功能下降而不能维持运动强度。据WHO调查,全球约有35%以上的人处于疲劳状态,中年男性人群疲劳状态达60.70%,我国有近70%的中年人处于疲劳状。疲劳的出现,可引起运动能力降低、战斗力减退、工作效率降低、差错事故增多。疲劳发生后如果得不到及时的恢复,逐渐积累,还会导致“过劳”,出现“过度训练综合征”、“慢性疲劳综合症”等,使机体发生内分泌紊乱、免疫力下降,甚至出现器质性病变,成为威胁人类健康的重要因素。
在社会竞争日益激烈,人们日益讲求工作实效而又重视身体保健的今天,从天然植物资源中寻找安全、有效的抗疲劳成为已成为预防医学和运动医学研究的热点。因此,研究一种既能开发牛大力的食用价值,又可为大众提供营养元素的牛大力饮料具有重大的价值和意义。
发明内容
本发明是为了解决上述不足,提供了一种牛大力植物能量功能饮料及其制备方法。
本发明的上述目的通过以下的技术方案来实现:一种牛大力植物能量功能饮料,其特征在于:包括牛大力提取液、人参、枸杞、甘草提取液、甜味剂、防腐剂。
进一步,所述牛大力提取液和甘草提取液的体积比为4-6:1。
进一步,所述甜味剂为甜菊糖苷,甜菊糖苷的加入量为牛大力提取液和甘草提取液重量之和的0.016%-0.02%。
进一步,所述防腐剂为山梨酸钾,山梨酸钾的加入量为牛大力提取液和甘草提取液重量之和的0.03%-0.05%。
进一步,所述人参的加入量是牛大力提取液重量的0.02%-0.03%,枸杞加入量是牛大力提取液重量的0.06%。
所述牛大力饮料的制备方法包括以下步骤:
1)牛大力提取液的制备:取牛大力和纯化水,牛大力和纯化水的重量比为3:700,待水煮沸后,加入牛大力和菠萝蛋白酶,继续煮沸到120℃保持20分钟,趁热用纱布过滤,后离心分离,分离后加入纯化水,补足重量,使与最初煮制时加入的纯化水的重量一致;
2)甘草提取液的制备:取甘草和纯化水,甘草和纯化水的重量比为1:200,加入碳酸氢钠,用冷水浸泡30分钟,煮至沸腾,80-85℃微沸1小时,趁热用纱布过滤,过滤后加入纯化水,补足重量,使与最初煮制时加入的纯化水的重量一致;
3)调配:取步骤1)和步骤2)得到的牛大力提取液和甘草提取液,加入甜味剂、防腐剂进行调制,杀菌消毒后得牛大力饮料。
进一步,所述步骤1)中,加入的菠萝蛋白酶的重量为牛大力重量的0.01%-0.03%。
进一步,所述步骤2)中,加入的碳酸氢钠的重量为甘草重量的0.1-0.2%。
甘草属于豆科多年生草本植物,作为我国传统药材之一,甘草具有多种药用功能,如补脾益气、清热解毒、祛痰咳喘、调和白药等作用,甘草中含有多种化学成分,其中,有益成分为三萜皂苷类化合物(甘草酸、甘草次酸)、黄酮类化合物(甘草苷、异甘草苷)、甘草多糖等。
本发明与现有技术相比的优点是:本发明通过牛大力和甘草的伍配,并且添加具有高甜度低热值的甜菊糖苷,甜菊糖苷不会影响血糖水平或干扰胰岛素,同时不含任何卡路里,可以给糖尿病人在预算总摄入热量方面提供更多灵活选择,并有利于控制体重,并且添加的防腐剂为山梨酸钾,能够使得牛大力饮料的保质期得以延长,并且本发明在制备方面的改进,使得生产的牛大力饮料有益成分的含量较高。
具体实施方式
下面结合实施例对本发明进一步详述。
实施例1:
本发明的一种牛大力植物能量功能饮料,包括牛大力提取液、人参、枸杞、甘草提取液、甜味剂、防腐剂,所述牛大力提取液和甘草提取液的体积比为4:1,所述甜味剂为甜菊糖苷,甜菊糖苷的加入量为牛大力提取液和甘草提取液重量之和的0.016%,所述防腐剂为山梨酸钾,山梨酸钾的加入量为牛大力提取液和甘草提取液重量之和的0.03%。所述人参的加入量是牛大力提取液重量的0.02%,枸杞加入量是牛大力提取液重量的0.06%。其制备方法包括以下步骤:
1)牛大力提取液的制备:取牛大力和纯化水,牛大力和纯化水的重量比为3:700,待水煮沸后,加入牛大力和菠萝蛋白酶,菠萝蛋白酶的重量为牛大力重量的0.01%,继续煮沸到120℃保持20分钟,趁热用纱布过滤,后离心分离,分离后加入纯化水,补足重量,使与最初煮制时加入的纯化水的重量一致;

实施例2:

3)调配:取步骤1)和步骤2)得到的牛大力提取液和甘草提取液,牛大力提取液和甘草提取液的体积比例为5:1,加入甜菊糖苷、山梨酸钾进行调制,甜菊糖苷的加入量为牛大力提取液和甘草提取液重量之和的0.018%,山梨酸钾的加入量为牛大力提取液和甘草提取液重量之和的0.04%,杀菌消毒后得牛大力饮料。
实施例3:
本发明的一种牛大力植物能量功能饮料,包括牛大力提取液、人参、枸杞、甘草提取液、甜味剂、防腐剂,所述牛大力提取液和甘草提取液的体积比为6:1,所述甜味剂为甜菊糖苷,甜菊糖苷的加入量为牛大力提取液和甘草提取液重量之和的0.02%,所述防腐剂为山梨酸钾,山梨酸钾的加入量为牛大力提取液和甘草提取液重量之和的0.05%。其制备方法包括以下步骤:

实验分析:
1.牛大力饮料感官指标评价。
将本发明实施例2所制备的牛大力饮料进行感官分析,分析结果如表1所示:

从表1可看出,本发明实施例2所制备的牛大力饮料,组织状态、色泽、风味和口感较佳,满足消费者的需求。
2.牛大力饮料营养素参考值。
将本发明实施例2所制备的牛大力饮料进行营养分析,分析结果如表2所示:

从表2可看出,本发明实施例2制备的牛大力饮料蛋白质含量较高,能量值较低,消费群体教广泛。
本发明通过牛大力和甘草的伍配,并且添加具有高甜度低热值的甜菊糖苷,甜菊糖苷不会影响血糖水平或干扰胰岛素,同时不含任何卡路里,可以给糖尿病人在预算总摄入热量方面提供更多灵活选择,并有利于控制体重,并且添加的防腐剂为山梨酸钾,能够使得牛大力饮料的保质期得以延长,并且本发明在制备方面的改进,使得生产的牛大力饮料有益成分的含量较高。

1.一种牛大力植物能量功能饮料,其特征在于:包括牛大力提取液、人参、枸杞、甘草提取液、甜味剂、防腐剂。
2.根据权利要求1所述一种牛大力植物能量功能饮料,其特征在于:所述牛大力提取液和甘草提取液的体积比为4-6:1。
3.根据权利要求1所述一种牛大力植物能量功能饮料,其特征在于:所述甜味剂为甜菊糖苷,甜菊糖苷的加入量为牛大力提取液和甘草提取液重量之和的0.016%-0.02%。
4.根据权利要求1所述一种牛大力植物能量功能饮料,其特征在于:所述防腐剂为山梨酸钾,山梨酸钾的加入量为牛大力提取液和甘草提取液重量之和的0.03%-0.05%。
5.根据权利要求1所述一种牛大力植物能量功能饮料,其特征在于:所述人参的加入量是牛大力提取液重量的0.02%-0.03%,枸杞加入量是牛大力提取液重量的0.06%。
6.一种牛大力饮料的制备方法,其特征在于:包括以下步骤:
1)牛大力提取液的制备:取牛大力和纯化水,牛大力和纯化水的重量比为3:700,待水煮沸后,加入牛大力和菠萝蛋白酶,继续煮沸到120℃保持20分钟,趁热用纱布过滤,后离心分离,分离后加入纯化水,补足重量,使与最初煮制时加入的纯化水的重量一致;
2)甘草提取液的制备:取甘草和纯化水,甘草和纯化水的重量比为1:200,加入碳酸氢钠,用冷水浸泡30分钟,煮至沸腾,80-85℃微沸1小时,趁热用纱布过滤,过滤后加入纯化水,补足重量,使与最初煮制时加入的纯化水的重量一致;

7.根据权利要求6所述一种牛大力饮料的制备方法,其特征在于:所述步骤1)中,加入的菠萝蛋白酶的重量为牛大力重量的0.01%-0.03%。
8.根据权利要求6所述一种牛大力饮料的制备方法,其特征在于:所述步骤2)中,加入的碳酸氢钠的重量为甘草重量的0.1-0.2%。
