S4、将面团C放入蒸汽蒸饭柜中,在压强为0.18MPa的条件下,蒸煮32min后,切制得细条状面芋D;
S5、将面芋D灭菌、分装后,置于-20℃的低温下,冷冻保存即得。
实施例三
本发明提出的速冻营养保健面芋,包括以下重量份的原料:小麦粉20份、甘薯粉20份、赤小豆10份、黑芝麻5份、黑豆5份、黑花生5份、黑米5份、蔬菜粉15份、中药提取物8份、调味剂1份,其中,蔬菜粉为胡萝卜粉、芹菜粉、菠菜粉、黄花菜粉、藕粉、南瓜粉和茄子粉的组合物;中药提取物为质量比为2:1.5:2:1的黄芪提取物、土茯苓提取物、当归提取物和天麻提取物的组合物。
其制作方法,包括以下步骤:
S1、将所述比重的赤小豆、黑芝麻、黑豆、黑花生和黑米洗净后,置于78℃的温度下烘干,然后经粉碎机充分粉碎后,过50目筛,得混合细粉A;
S2、将所述比重的小麦粉、甘薯粉、蔬菜粉、中药提取物与步骤S1中所得的混合细粉A共同加入到高速混合机中,以550r/min的转速进行搅拌,边搅拌边加入所述比重的调味剂,搅拌混合均匀得混合物料B;
S3、将步骤S2中所得的混合物料B加入到揉面机中,加水至含水率为32%,揉制25min后,压制得厚度为2mm面团C;
S4、将面团C放入蒸汽蒸饭柜中,在压强为0.1MPa的条件下,蒸煮25min后,切制得细条状面芋D;
S5、将面芋D灭菌、分装后,置于-18℃的低温下,冷冻保存即得。
本发明提出的速冻营养保健面芋,开袋加入沸汤中,煮熟即可食用,食用方便,成本低,随机选取300名试吃者,平均分成3组,分别于每日早餐食用本发明实施例一~三中制备的速冻营养保健面芋15d后,统计口感满意度和检测试吃者身体状况,得如下结果:

1.速冻营养保健面芋,其特征在于,包括以下重量份的原料:小麦粉20~40份、甘薯粉20~30份、赤小豆10~20份、黑芝麻5~8份、黑豆5~16份、黑花生5~16份、黑米5~16份、蔬菜粉15~22份、中药提取物8~14份、调味剂1~3份。
2.根据权利要求1所述的速冻营养保健面芋,其特征在于,包括以下重量份的原料:小麦粉25~35份、甘薯粉22~28份、赤小豆12~18份、黑芝麻6~7份、黑豆6~14份、黑花生6~14份、黑米6~14份、蔬菜粉16~20份、中药提取物9~12份、调味剂1.5~2.5份。
3.根据权利要求1所述的速冻营养保健面芋,其特征在于,包括以下重量份的原料:小麦粉30份、甘薯粉25份、赤小豆15份、黑芝麻6.5份、黑豆10份、黑花生10份、黑米10份、蔬菜粉18份、中药提取物10份、调味剂2份。
4.根据权利要求1所述的速冻营养保健面芋,其特征在于,所述黑芝麻、黑豆、黑花生、黑米的质量比为1:1~2:1~2:1~2。
5.根据权利要求1所述的速冻营养保健面芋,其特征在于,所述蔬菜粉为胡萝卜粉、芹菜粉、菠菜粉、黄花菜粉、藕粉、南瓜粉和茄子粉中的任意几种组合物。
6.根据权利要求1所述的速冻营养保健面芋,其特征在于,所述中药提取物为质量比为2~4:1.5~2.5:2~3:1~2的黄芪提取物、土茯苓提取物、当归提取物和天麻提取物的组合物。
7.速冻营养保健面芋的制作方法,其特征在于,包括以下步骤:
S1、将所述比重的赤小豆、黑芝麻、黑豆、黑花生和黑米洗净后,置于78~95℃的温度下烘干,然后经粉碎机充分粉碎后,过50~80目筛,得混合细粉A;
S2、将所述比重的小麦粉、甘薯粉、蔬菜粉、中药提取物与步骤S1中所得的混合细粉A共同加入到高速混合机中,以550~750r/min的转速进行搅拌,边搅拌边加入所述比重的调味剂,搅拌混合均匀得混合物料B;
S3、将步骤S2中所得的混合物料B加入到揉面机中,加水至含水率为32~45%,揉制25~40min后,压制得厚度为2~8mm面团C;
S4、将面团C放入蒸汽蒸饭柜中,在压强为0.1~0.25MPa的条件下,蒸煮25~40min后,切制得细条状面芋D;
S5、将面芋D灭菌、分装后,置于-18~-24℃的低温下,冷冻保存即得。
