本发明公开了一种抗疲劳保健饮品及其制备方法,由以下组分及重量份制成:松花粉1~15份、蛹虫草2~10份、人参5~20份、诺丽果浆1~15份、短梗五加2~10份、枸杞子5~10份、覆盘子3~8份、黄精2~16份、黑芝麻1~8份、龙眼肉3~20份。本发明采用了凝结芽孢杆菌和酵母菌混合发酵,在发酵剂中添加了菊粉、聚葡萄糖和香菇提取物,可达到良好的菌种活化效果。本发明制备出来的保健饮品酒精度0~8%vol,口味协调,色泽好,风味佳,操作过程较简单,不易染杂菌,只用一次发酵且发酵周期短,适宜在工厂批量生产。本发明不需要添加防腐剂、抑菌剂,具有提高免疫力、抗疲劳、温肾助阳、补气养血、丰富营养等保健功效的天然保健饮品的制备方法,具有很好的市场前景。

背景技术
现代人们的生活节奏快、工作紧张,竞争激烈,压力大,许多人经常感觉到全身乏力、疲劳,更有甚者夜不能眠、影响食欲等正常生活,长期处于一种亚健康状态。中医认为疲倦乏力皆因过度劳累,思虑过度,压力过大,轻则引起气血不足,阴阳失调,重则累及脏腑,出现功能失调导致虚证。
现在市场上保健饮品的品种众多,但一般都采用简单的泡制制成,酒度较高,不宜多饮,保健作用不明显,口感不佳,常伴有饮后上头或饮后不适的情况。
凝结芽孢杆菌是革兰氏阳性菌,属厚壁菌门,好氧、能产孢子和L-乳酸,是近年来益生菌领域的后起之秀。它具有庞大的酶***,可产生蛋白酶、脂肪酶、淀粉酶以及木聚糖酶等酶以促进自身生长,同时产生凝结素等抗菌物质抑制其他有害菌的生长。凝结芽孢杆菌具有改善胃肠道微环境、增强肠道粘膜免疫能力等生理功能,它除了具有乳酸菌的所有特点外,还具有抗逆性强、耐高温、耐酸、易储存等芽孢杆菌所有的独特性,因此能顺利通过胃酸和消化酶的双重关口进入肠道“定居”,起到调节肠道菌群的作用。
发明内容
本发明目的在于克服现有技术的不足,提供一种能够缓解疲劳症状的保健饮品,运用凝结芽孢杆菌和酵母菌进行混合发酵保健饮品,发酵完的保健饮品口味协调,色泽好,风味佳,具有抗疲劳、温肾助阳、补气养血、丰富营养等特点。
为了实现上述目的,本发明采用如下技术方案:
一种抗疲劳保健饮品,由以下组分及重量份制成:松花粉1~15份、蛹虫草2~10份、人参5~20份、诺丽果浆1~15份、短梗五加2~10份、枸杞子5~10份、覆盘子3~8份、黄精2~16份、黑芝麻1~8份、龙眼肉3~20份。
上述抗疲劳保健饮品的制备方法,包括如下步骤:
(1)选料:各组分选取成色好、新鲜的原料,洗净,切成小段;
(2)水煮:将切好的原料浸泡30min,再水煮2~3h,与水混合,料水比为1:1~1:4;
(3)发酵剂的配比和活化:
发酵剂的重量份数配比:凝结芽孢杆菌粉(1012cfu/g)1~2份,酵母菌粉(2×1011~1012cfu /g)0~6份,氯化钠2~3份,葡萄糖10~15份,菊粉1~2份,聚葡萄糖3~5份,香菇提取物2~3份;
菌种的活化:将配好的发酵剂投入已灭菌的生理盐水进行活化15-30分钟,以提升菌种的活力;
(4)接种:把已经活化好的发酵剂按接种量为0.5%~2%接种到原料液中,摇匀,让菌种与原料充分混合;
(5)加糖:根据保健饮品的甜度和口感所需,加入白砂糖,调节糖度到5%~15%;
(6)发酵:将已接种调配好的保健饮品放入恒温生化培养箱进行发酵培养,发酵温度26~30℃,发酵时间5~10天;
(7)提取分离:按以下两种方式能得到不同的产品;
取出发酵好的保健饮品,通过板框过滤,再经过膜过滤(0.2μm以下),即得到澄清透明的保健饮品;
或者
取出发酵好的保健饮品,通过板框过滤,再通过冷链运输,即得到含活菌、具有良好营养保健功效的保健饮品。
与现有技术相比,本发明具有如下有益效果:本发明采用了凝结芽孢杆菌和酵母菌混合发酵,其中凝结芽孢杆菌为好氧型细菌,发酵过程中消耗氧气可抑制原料的霉变和风味物质的恶变。在发酵剂中添加了菊粉、聚葡萄糖和香菇提取物,发酵环境中有充足的C源和N源,可达到良好的菌种活化效果,适宜凝结芽孢杆菌的生长和发酵,产生更多的L-乳酸和抗菌物质。L-乳酸能使本发明的酸味更自然,同时pH值的降低和凝结素等抗菌物质的增加可抑制其他有害菌的生长,利于保健饮品的品质和稳定性,能大大延长保健饮品的保质期。凝结芽孢杆菌本身具有调节肠道菌群平衡和抗疲劳作用,两种菌种混合发酵利于中草药原料功效成分的溶出,营养成分含量均有增加,增强了保健饮品的营养价值,有利于人体的吸收和消化,达到驱除疲劳等功效。此外,凝结芽孢杆菌发酵产生酸类物质,能与酵母菌发酵产生的醇生成酯类物质,有助于保健饮品特色风味物质的形成。本发明制备出来的保健饮品酒精度0~8%vol,口味协调,色泽好,风味佳,具有丰富营养和保健功能等特点,操作过程较简单,不易染杂菌,只用一次发酵且发酵周期短,适宜在工厂批量生产。因此,本发明这种不需要添加防腐剂、抑菌剂,具有提高免疫力、抗疲劳、温肾助阳、补气养血、丰富营养等保健功效的天然保健饮品的制备方法,具有很好的市场前景。
具体实施方式
以下结合两个实施例对本发明做进一步详细说明,但本发明并不限于下述实施例。
实施例1:
a选料及原料的配方:
a1选料:选取成色好、新鲜的药食同源原料,洗净,切成小段;
a2原料的配方:按以下组分及重量份进行复合配比:松花粉1份、蛹虫草2份、人参5份、诺丽果浆5份、短梗五加2份、枸杞子10份、覆盘子7份、黄精5份、黑芝麻2份、龙眼肉3份;
b水煮:将切好的原料浸泡30min,再水煮2h,与水混合(料水重量比为1:1~1:4);
c发酵剂的配比和活化:
c1发酵剂的重量份配比:凝结芽孢杆菌粉1份,氯化钠2份,葡萄糖15份,菊粉1份,聚葡萄糖5份,香菇提取物3份;
c2菌种的活化:将配好的发酵剂投入已灭菌的生理盐水进行活化15分钟,以提升菌种的活力;
d接种:把已经活化好的发酵剂按接种量为0.5%接种到原料液中,摇匀,让菌种与原料充分混合;
e加糖:根据保健饮品的甜度和口感所需,加入白砂糖,调节糖度到5%;
f发酵:将已接种调配好的保健饮品放入恒温生化培养箱进行发酵培养,发酵温度30℃,发酵时间10天;
g取出发酵好的保健饮品,通过板框过滤,再经过膜过滤(0.2μm以下),即得到澄清透明的保健饮品;
实施例2:

b水煮:将切好的原料浸泡30min,再水煮3h,与水混合(料水重量比为1:1~1:4);
c发酵剂的配比和活化:
c1发酵剂的配比:凝结芽孢杆菌粉2份,酵母菌粉4份,氯化钠3份,葡萄糖10份,菊粉2份,聚葡萄糖4份,香菇提取物2份;
c2菌种的活化:将配好的发酵剂投入已灭菌的生理盐水进行活化30分钟,以提升菌种的活力;
d接种:把已经活化好的发酵剂按接种量为2%接种到原料液中,摇匀,让菌种与原料充分混合;
e加糖:根据保健饮品的甜度和口感所需,加入白砂糖,调节糖度到20%;
f发酵:将已接种调配好的保健饮品放入恒温生化培养箱进行发酵培养,发酵温度26℃,发酵时间5天;
g取出发酵好的保健饮品,通过板框过滤,再通过冷链运输,即得到含活菌、具有良好营养保健功效的保健饮品。
Claims (2)
1.一种抗疲劳保健饮品,其特征在于由以下组分及重量份制成:松花粉1~15份、蛹虫草2~10份、人参5~20份、诺丽果浆1~15份、短梗五加2~10份、枸杞子5~10份、覆盘子3~8份、黄精2~16份、黑芝麻1~8份、龙眼肉3~20份。
2.权利要求1所述抗疲劳保健饮品的制备方法,其特征在于包括如下步骤:
(1)选料:各组分选取成色好、新鲜的原料,洗净,切成小段;
(2)水煮:将切好的原料浸泡30min,再水煮2~3h,与水混合,料水重量比为1:1~1:4;
(3)发酵剂的配比和活化:
发酵剂的重量份数配比:凝结芽孢杆菌粉1~2份,酵母菌粉0~6份,氯化钠2~3份,葡萄糖10~15份,菊粉1~2份,聚葡萄糖3~5份,香菇提取物2~3份;
菌种的活化:将配好的发酵剂投入已灭菌的生理盐水进行活化15-30分钟;
(4)接种:把已经活化好的发酵剂按接种量为0.5%~2%接种到原料液中,摇匀,让菌种与原料充分混合;
(5)加糖:加入白砂糖,调节糖度到5%~15%;
(6)发酵:将已接种调配好的保健饮品放入恒温生化培养箱进行发酵培养,发酵温度26~30℃,发酵时间5~10天;
(7)提取分离:按以下两种方式能得到不同的产品;
取出发酵好的保健饮品,通过板框过滤,再经过膜过滤,即得到澄清透明的保健饮品;
或者
取出发酵好的保健饮品,通过板框过滤,再通过冷链运输,即得保健饮品。
