技术领域
本发明涉及果酱,具体是一种采用紫薯和猕猴桃搭配而制成的复合营养果酱。
背景技术
果酱是把水果、糖及酸度调节剂混合后,用超过100℃温度熬制而成的凝胶物质,也叫果子酱。制作果酱是长时间保存水果的一种方法。主要用来涂抹于面包或吐司上食用。
目前,市面上的果酱虽然种类繁多,但通常都由番茄、苹果、草莓、葡萄等单一果蔬制成 ;不仅口味比较单一, 而且采用高温浓缩工艺,果蔬的有效营养成分容易遭受破坏,降低了果酱的营养成分。
发明内容
本发明的目的是针对现有技术中存在的上述不足, 而提供一种以紫薯和猕猴桃为主要原料、可保持果蔬固有营养成分和原有风味的紫薯猕猴桃复合营养果酱。
实现本发明目的的技术方案是:
一种紫薯猕猴桃复合营养果酱,由下述重量配比的原料制成:紫薯 30-40份、猕猴桃 40-50份、罗汉果甜苷1-2份、淮山精粉1-2份、柠檬酸1-2份、螺旋藻1-3份、山梨酸钾0.5-1份、水10-30份;
其制备方法如下 :
1)将紫薯洗净、去皮、熟化, 粉碎成紫薯泥;
2)将猕猴桃去皮、粉碎成浆料;
3)将紫薯泥、猕猴桃浆料、罗汉果甜苷、淮山精粉、柠檬酸、螺旋藻、山梨酸钾、水混合,放入胶体磨中磨均匀;
4)灌装、灭菌消毒即得本发明果酱。
上述紫薯猕猴桃复合营养果酱,原料的优选重量配比为:紫薯35份、猕猴桃45份、罗汉果甜苷1.5份、淮山精粉1.5份、柠檬酸1.5份、螺旋藻2份、山梨酸钾0.5份、水13份。
上述技术方案中,紫薯除了具有普通红薯的营养成分外,还富含硒元素和花青素。花青素是目前科学界发现的防治疾病、维护人类健康最直接、最有效、最安全的自由基清除剂,其清除自由基的能力是维生素C的20倍、维生素E的50倍。紫薯富含硒和铁是人体抗疲劳、抗衰老、补血的必要元素,特别是硒被称为“抗癌大王”,易被人体吸收,可留在血清中,修补心肌,增强机体免疫力,清除体内自由基,抑制癌细胞中DNA的合成和癌细胞的***与生长,预防胃癌、肝癌等癌病的发生。紫薯还富含纤维素,可促进肠胃蠕动,保持大便畅通,改善消化道环境,防止胃肠道疾病的发生。吃紫薯不仅不会发胖,相反能够减肥、健美、防止亚健康、通便排毒。每100克鲜紫薯仅含0.2克脂肪,产生99千卡热能,是很好的低脂肪、低热能食品,同时又能有效地阻止糖类变为脂肪,有利于减肥、健美。紫薯含有大量黏液蛋白,能够防止肝脏和肾脏***萎缩,提高机体免疫力,预防胶原病发生。紫薯营养价值高适用人群广泛。
上述技术方案中,猕猴桃含有丰富的碳水化合物,维生素和微量元素。尤其是维生素C、维生素A叶酸的含量较高。维生素C的含量是苹果的十倍左右,被誉为“维生素C之王”。猕猴桃属低脂低热量水果,还有丰富的叶酸、膳食纤维、低钠高钾等。果肉中黑色颗粒部分,有丰富的维生素E。

上述技术方案中,罗汉果甜苷又称罗汉果甜甙,萃取于广西特产经济植物—罗汉果,其甜度为蔗糖的300倍,其热量为零,具有清热润肺镇咳、润肠通便之功效,对肥胖、便秘、糖尿病等具有防治作用。罗汉果甜苷作为食品是安全无毒的,添加到中药里,没有任何异味或苦涩味,甜味特征曲线几乎与蔗糖重叠,这是其它任何甜味剂无法比拟的。添加到烹饪食品内,甘甜爽滑、不会引起血糖波动,糖尿病人也可食用。

实施例1
制备紫薯猕猴桃复合营养果酱:
1) 将紫薯35千克洗净、去皮、蒸熟,粉碎成紫薯泥 ;
2)将猕猴桃45千克去皮、粉碎成浆料 ;
3)将上述紫薯泥、猕猴桃浆料与罗汉果甜苷1.5 千克、淮山精粉1.5千克、柠檬酸1.5千 克、螺旋藻2千克、山梨酸钾0.5 千克、水13千克混合, 放入胶体磨中磨均匀;
4)灌装、灭菌消毒即得本发明果酱。

本实施例果酱的制备方法同实施例1;其中,紫薯35千克、猕猴桃40千克、罗汉果甜苷1千克、淮山精粉2千克、柠檬酸2千克、螺旋藻3千克、山梨酸钾1千克、水16千克。

Claims (2)
1.一种紫薯猕猴桃复合营养果酱, 其特征在于由下述重量配比的原料制成:
紫薯 30-40份、猕猴桃 40-50份、罗汉果甜苷1-2份、淮山精粉1-2份、柠檬酸1-2份、螺旋藻1-3份、山梨酸钾0.5-1份、水10-30份;
其制备方法如下:
1)将紫薯洗净、去皮、熟化,粉碎成紫薯泥;
2)将猕猴桃去皮、粉碎成浆料;
3)将紫薯泥、猕猴桃浆料、罗汉果甜苷、淮山精粉、柠檬酸、螺旋藻、山梨酸钾、水混合,放入胶体磨中磨均匀;
4)灌装、灭菌消毒即得本发明果酱。
2.根据权利要求 1 所述的紫薯猕猴桃复合营养果酱,其特征在于原料的重量配比为:紫薯35份、猕猴桃45份、罗汉果甜苷1.5份、淮山精粉1.5份、柠檬酸1.5份、螺旋藻2份、山梨酸钾0.5份、水13份。
