背景技术
“肾为先天之本、脾为后天之本”,脾胃健康整个消化***就能正常运行,肾脏健康才能促进肾脏新陈代谢功能,身体才不会出现各种各样的不适应,脾与肾,先天后天相互支撑,相互促进,才能保证人体的健康长寿。近代医家张锡纯在《医学衷中参西录》中曾指出:食物“病人服之,不但疗病,并可充饥;不但充饥,更可适口,用之对症,病自渐愈,即不对症,亦无他患”。所以,中医所讲究“药食同源”是指许多食物也是药物,它们之间并无绝对的分界线。
选取一些“药食同源”食物,通过合理的烹调加工成为既营养美味,又能对人们脾、肾进行食疗的食品有着重要意义。
发明内容
针对上述问题,本发明要解决的技术问题是制作一种即营养美味,又可以健脾益肾,起到食疗作用的食品,具体说是发明一种健脾益肾果仁酥。
为实现上述目的,本发明采取以下技术方案:

所述一种健脾益肾果仁酥的制作工艺如下:
(1)原料制备:花生经过烘烤、脱皮、破瓣、筛选后备用;黑芝麻经过清洗、筛选并烤熟;黄精、枸杞子、山药、芡实、茯苓、桑葚、黑豆、薏苡仁、菊花经过筛选、洗净、晾干后分别制取提取液;将大枣经过筛选、干燥、去核、粉碎为2-5毫米大小的颗粒后备用;再将核桃经过去皮、筛选、烘烤、破碎为2-5毫米大小的核桃仁颗粒后待用。
(2)化糖:熬糖锅内放入蔗糖、液体麦芽糖浆、黄精提取液、枸杞子提取液、山药提取液、芡实提取液、茯苓提取液、桑葚提取液、黑豆提取液、薏苡仁提取液、菊花提取液。
(3)熬制:熬制时应注意进行搅拌,以免发生糊锅现象,等到混合物溶液形成膏状,颜色淡黄,能拔细丝时即挪离炉火,混合物溶液温度根据冬夏等季节的气温不同而调整,冬季约140℃,夏季约150℃。
(5)拌料:熬糖锅挪离炉火后,立即向锅内倒入花生、核桃仁、大枣、黑芝麻,快速搅拌,使原料和糖液混合均匀。
(6)压片、切块:采用机器压片、切块。
(7)冷却、包装:待产品凉透后,包装为成品。
本发明所用原料的作用如下:
黄精:归肺、脾、肾经,具有补气养阴,健脾,润肺,益肾的作用,可以起到一定的补气和滋补身体的作用。
枸杞子含有丰富的胡萝卜素、维生素A1、B1、B2以及钙、铁微量元素等;还有提高机体免疫力的作用,可以壮筋骨、去虚劳、滋肾润肺、补益精气的作用;《本草汇言》称枸杞子“使气可充,血可补,阳可生,阴可长”;《本草纲目》记载:“枸杞,补肾生精,养肝明目,坚精骨,去疲劳,易颜色,变白,明目安神,令人长寿”。
茯苓含茯苓多糖、蛋白质、氨基酸等营养元素。食用茯苓,有补五劳七伤、善安心神、通利小便、生津、和中益气的功效;《神农本草经》称茯苓“久服安魂养神,不饥延年”。
山药:富含维生素及钙、磷、钾等矿物质和人体必需氨基酸;《药性论》说山药:“补五劳七伤,去冷风,止腰痛,镇心神,补心气不足,患人体虚羸,加而用之”;《神农本草经》谓之“主健中补虚、除寒热邪气、补中益气力、长肌肉、久服耳目聪明”。
芡实:早在《神农本草经》中就有明确记载,芡实“主湿痹腰脊膝痛,补中除暴疾,益精气,强志,令耳目聪明”,现代中药学也将其归纳为收涩药,具有益肾固精,除湿止带,健脾止泻等功能,常用于治疗梦遗滑精,遗尿尿频,脾虚久泻,白浊,带下等症;芡实除了药用功效之外,还具有很高的食疗价值,在我国自古作为永葆青春活力、防止未老先衰之良物,被誉为“水中人参”。
黑豆:黑豆味甘性平,入脾经、肾经,具有补肾益阴、健脾利湿、除热解毒的功效。在五行理论中,黑色属水,水走肾,所以黑豆的补肾效果明显,尤其适用于肾虚阴亏者。黑豆亦能健脾利水,治疗肢体、面部浮肿之人。李时珍在《本草纲目》中记载:“常食黑豆,可百病不生。”《本草纲目拾遗》言其“服之能益精补髓,壮力润肌,发白后黑”。
桑葚:入肝、肾经;具有补肝,益肾,熄风,滋液。
菊花:味辛,甘,苦;性微寒;归肺、肝经。
薏苡仁:《本草纲目》记载薏苡仁能“健脾益胃,补肺清热,去风胜湿。”桂林地区有首民谣这样唱道:“薏米胜过灵芝草,药用营养价值高,常吃可以延年寿,返老还童立功劳”。
花生有扶正补虚、悦脾和胃、润肺化痰、滋养调气、利水消肿、止血生乳、清咽止疟的作用。
黑芝麻味甘、性平,入肝、肾、肺、脾经,具有补血明目、祛风润肠、生津通乳、益肝养发、强身体,抗衰老之功效。
核桃仁味甘,性温。具有补肾助阳、强腰膝、温肺定喘、润肠通便等功效。《开宝本草》说它“食之令人肥健,润肌黑发”;《本草纲目》说它“补气养血,润燥化痰,益命门,刊三焦,温肺润肠,治虚寒喘嗽,腰部重痛”。
大枣含有丰实的营养物质和多种微量元素,具有独特的营养和药用价值,中医认为大枣可以养血、益气、安神、润心肺、补五脏、治虚损,常将大枣用于补气补血的药方中;《本草新编》称大枣“通九窍,和百药,养肺胃,益气,润心肺,生津,助诸经,补五脏”。
《本草经疏》中说饴糖“甘入脾,而米麦皆养脾胃之物,故主补虚乏”;《长沙药解》中说饴糖“补脾精,化胃气,生津,养血,缓里急,止腹痛”。

(3)化糖:熬糖锅内放入蔗糖、液体麦芽糖浆、黄精提取液、枸杞子提取液、山药提取液、芡实提取液、茯苓提取液、桑葚提取液、黑豆提取液、薏苡仁提取液、菊花提取液。
(4)熬制:熬制时应注意进行搅拌,以免发生糊锅现象,等到混合物溶液形成膏状,颜色淡黄,能拔细丝时即挪离炉火,此时混合物溶液温度145℃。
(5)拌料:熬糖锅挪离炉火后,立即向锅内倒入花生、核桃仁、大枣、黑芝麻,快速搅拌,使原料和糖液混合均匀。
(6)压片、切块:采用机器压片、切块。
(7)冷却、包装:待产品凉透后,包装为成品。
