Abstract

一种利用海藻糖的保护功能延长水稻储藏期的方法,涉及在一定的海藻糖浓度、一定的喷雾着水量、一定均质时间及含水量,使得海藻糖与水稻内的蛋白质、淀粉等物质充分接触。利用海藻糖与生物大分子形成一种类似水晶状的玻璃体结构,能使生物分子维持在一定的空间结构,从而抵御外界极端环境的影响。海藻糖的这一功能可以防止蛋白质变性、抑制脂类物质酸败等,有效的抑制在储藏中的水稻的陈化,延长水稻储藏期。仓储环境下普通水稻可保存24个月,添加海藻糖的水稻储藏32个月后RVA峰值粘度达到3396cP高于普通水稻;RVA最终粘度达到3971cP低于普通水稻;游离脂肪酸含量31mgKOH/100g低于普通水稻,32个月后添加海藻糖的水稻发霉率为0.2%低于普通水稻,进而使储藏期达到32个月。

技术领域
本发明涉及水稻加工领域,是一种利用海藻糖的保护功能延长水稻储藏期的方法。
背景技术
全世界每年生产的稻谷约6.4亿吨,占世界粮食的一半左右。所以稻谷顺利成为主要的粮食之一。稻谷的产量十分巨大,除了一部分要作为人们日常的主食外,还有一部分要作为工业用粮;正如大家所了解的,还有一部分要用来储备。粮食的储备对于一个国家的稳定有至关重要的作用,粮食是每一个国家发展经济、保障供给、安定社会的重要战略物资。但是,我国粮食的产后损失非常严重,因陈化造成储粮品质降低引起的损失则占总损失的20%左右,我国每年损失量达万吨。
水稻是我国最重要的粮食作物之一,稻谷的耐储藏特性是影响国家粮食储备能力的关键。稻谷在一般储存条件下第二年开始陈化变质,在高温高湿地区稻谷储藏发生陈化时间则更短。为此国家储备粮采用分散分批、定期推陈储新、轮流更新的方法,耗费了大量的人力、物力和财力。稻谷储存陈化变质导致品质下降,商品性下降;加上霉变、仓储害虫危害等影响,威胁着粮食的安全储藏,给国家财政造成一定的负担。同样种子储备也因陈化等原因使种子活力下降,发芽率变差,给生产上带来一定的影响。因此,开展水稻的储藏研究具有重大的经济与社会效益。
发明内容
本发明提供一种利用海藻糖的保护功能延长水稻储藏期的方法,通过在水稻存储过程中,添加一定浓度的海藻糖。通过海藻糖对蛋白质变性、淀粉陈化及对脂类氧化等抑制作用,从而进一步抑制水稻的陈化。通过检测储藏一年后水稻的RVA、脂肪酸含量及发霉率可以明显看出添加海藻糖的水稻特性优于普通水稻,储存期达到32个月,比普通水稻的储存期延长了8个月。
具体实施方式
具体实施方式一:
步骤一:将α,α-1,1键连接的海藻糖溶解于水,制成浓度为9%、10%、11%、12%、13%的海藻糖溶液;将配制好的海藻糖溶液进行喷洒着水,不停搅拌使溶液均匀附着在水稻表面,进而使海藻糖溶液渗入到水稻中;用海藻糖溶液着水润稻后,使海藻糖溶液渗入到水稻中,均质时间控制在5.5、6.0、6.5、7.0、7.5h;将水稻的水分含量控制在13.5%、14%、14.5%、15%、15.5%;
具体实施方式二:本实施方式与具体实施方式一不同点在于在步骤一中的海藻糖的浓度为10%、11%、12%,其它组成和步骤与具体实施方法一相同。
具体实施方式三:本实施方式与具体实施方式一不同点在于在步骤一中的均质时间控制在6.0、6.5、7.0h,其它组成和步骤与具体实施方法一相同。
具体实施方式四:本实施方式与具体实施方式一不同点在于在步骤一中的控制水稻的含水量为14%、14.5%、15%,其它组成和步骤与具体实施方法一相同。

Claims (4)

1.一种利用海藻糖的保护功能延长水稻储藏期的方法,其特征在于它的步骤如下:
步骤一:将α,α-1,1键连接的海藻糖溶解于水,制成浓度为9%、10%、11%、12%、13%的海藻糖溶液;将配制好的海藻糖溶液进行喷洒着水,不停搅拌使溶液均匀附着在水稻表面,进而使海藻糖溶液渗入到水稻中;用海藻糖溶液着水润稻后,使海藻糖溶液渗入到水稻中,均质时间控制在5.5、6.0、6.5、7.0、7.5h;将水稻的水分含量控制在13.5%、14%、14.5%、15%、15.5%。
2.根据权利要求1所述的一种海藻糖的添加延长水稻储藏期的方法,其特征在于步骤一中海藻糖的浓度为10%、11%、12%。
3.根据权利要求1所述的一种海藻糖的添加延长水稻储藏期的方法,其特征在于步骤一中均质时间控制在6.0、6.5、7.0h。
4.根据权利要求1所述的一种海藻糖的添加延长水稻储藏期的方法,其特征在于步骤一水稻的含水量为14%、14.5%、15%。
