一种生津泻火枸杞黄酒及其制备方法
技术领域
本发明属于食品加工技术领域,涉及一种黄酒酿造,尤其涉及一种生津泻火枸杞黄酒及其制备方法。
背景技术
我国黄酒的年产量约150万吨,发展非常迅速,与此同时,黄酒产业也存在污染及能耗大,装备水平及自动化程度不高等发展“瓶颈”。亟需进行***深入的研究,提升黄酒生产过程的技术及装备水平,实现黄酒产业现代化,使黄酒产业在保持传统特色的基础上走上可持续发展的道路。在黄酒酿造过程中,蒸煮操作是污染物排放及能源消耗最大的工序,包括大米的浸泡和蒸饭两个操作步骤。浸泡操作每年产生90万吨高浓有机废水,其中含2.7万吨COD污染物。蒸饭操作年蒸汽消耗约为48万吨,折合标煤6.48万吨。不需要浸泡操作的焙炒技术属于粮食淀粉干法糊化技术,可以革除大米蒸煮糊化操作的浸泡废水,大幅度降低黄酒酿造过程的废水排放量和污染物排放量。但是,当前大米焙炒技术还存在许多问题,主要包括:焙炒尾气排放造成大气污染和能源浪费;焙炒设备加工精密度要求高,设备投资大,控制精度也有较高要求,维护保养困难等;对焙炒技术的研究也存在研究水平低,缺乏对焙炒过程粮食淀粉糊化变化模式和机制的清晰认识,缺乏明确直接指导焙炒过程控制和设备放大的理论基础和方法。
发明内容
本发明克服了现有技术中的不足,提供了一种生津泻火枸杞黄酒及其制备方法。
本发明所采用的技术方案是:
一种生津泻火枸杞黄酒,由以下重量份的原料制成:
大米200-230、麦曲30-35、高锌茶叶10-15、红背叶根1-2、椰汁15-18、芦荟3-4、荔枝壳1-1.3、知母1.2-1.4、无花果0.9-1、新鲜枸杞2-3;
根据权利要求1所述的一种生津泻火枸杞黄酒的制备方法,包括以下步骤:
(1)取高锌茶叶烘焙干后研磨得茶粉,将大米与茶粉混合后置于流化床内在4m/s空床速度的270-280℃过热蒸汽中停留12.5s,再换以3m/s空床速度的200℃过热蒸汽内停留27.5s后得糊化富锌大米;
(2)将荔枝壳、知母、无花果加5-6倍水大火煎煮1-2小时后压滤去渣得中药液;将红背叶根通过正丁醇提取得提取物;
(3)将芦荟洗净、新鲜枸杞去核后混合榨汁去渣后与椰汁混合得果汁,将果汁小火熬煮,同时用细管对果汁里吹气,直至果汁熬至絮酱状得果絮备用;
(4)将步骤(1)所得糊化富锌大米加入麦曲后密封发酵30-35天后得生黄酒,将生黄酒与提取物、中药液在10-15℃下混合均质处理20-25分钟后充填到柔软包装容器中,然后置于高压装置中用水作为加压介质进行400MPa~600MPa的超高压杀菌处理10-15min得原酒,取出后,加入果絮,摇匀混合即得。
本发明的有益效果为:
本发明的黄酒清香甘醇,美味爽口,其中所加入的高锌茶是天然富含人体所需的锌元素的茶叶,可为饮用者补充锌元素,锌是人体必须的营养元素,对人体的生长发育,免疫防卫,创伤愈合有重要作用;
本发明通过过热蒸汽焙炒可以克服空气焙炒时尾气排放造成的大气污染和能源浪费,更是去除了传统蒸煮工艺上高浓度有机废水及污染物的排放,保护了环境的同时也节约了大量的资源,耗时短,更加效率,同时其中所加入的红背叶根通过正丁醇提出所得到的提取物可以抑制HBV两个抗原,又可抑带HBVDNA,对抗乙肝病毒具有很好的效果;此外,本发明在加工过程中添加了多种中草药,具有理气生津、健脾开胃、解毒消肿、润肠通便、降血压的功效。
具体实施方式
一种生津泻火枸杞黄酒,由以下重量份(千克)的原料制成:
大米200、麦曲30、高锌茶叶10、红背叶根1、椰汁15、芦荟3、荔枝壳1、知母1.2、无花果0.9、新鲜枸杞2;
根据权利要求1所述的一种生津泻火枸杞黄酒的制备方法,包括以下步骤:
(1)取高锌茶叶烘焙干后研磨得茶粉,将大米与茶粉混合后置于流化床内在4m/s空床速度的270-280℃过热蒸汽中停留12.5s,再换以3m/s空床速度的200℃过热蒸汽内停留27.5s后得糊化富锌大米;
(2)将荔枝壳、知母、无花果加5倍水大火煎煮1小时后压滤去渣得中药液;将红背叶根通过正丁醇提取得提取物;
(3)将芦荟洗净、新鲜枸杞去核后混合榨汁去渣后与椰汁混合得果汁,将果汁小火熬煮,同时用细管对果汁里吹气,直至果汁熬至絮酱状得果絮备用;
(4)将步骤(1)所得糊化富锌大米加入麦曲后密封发酵30天后得生黄酒,将生黄酒与提取物、中药液在10-15℃下混合均质处理20分钟后充填到柔软包装容器中,然后置于高压装置中用水作为加压介质进行400MPa~600MPa的超高压杀菌处理10min得原酒,取出后,加入果絮,摇匀混合即得。

1.一种生津泻火枸杞黄酒,其特征在于由以下重量份的原料制成:
大米200-230、麦曲30-35、高锌茶叶10-15、红背叶根1-2、椰汁15-18、芦荟3-4、荔枝壳1-1.3、知母1.2-1.4、无花果0.9-1、新鲜枸杞2-3。
2.根据权利要求1所述的一种生津泻火枸杞黄酒的制备方法,其特征在于包括以下步骤:
(1)取高锌茶叶烘焙干后研磨得茶粉,将大米与茶粉混合后置于流化床内在4m/s空床速度的270-280℃过热蒸汽中停留12.5s,再换以3m/s空床速度的200℃过热蒸汽内停留27.5s后得糊化富锌大米;
(2)将荔枝壳、知母、无花果加5-6倍水大火煎煮1-2小时后压滤去渣得中药液;将红背叶根通过正丁醇提取得提取物;
(3)将芦荟洗净、新鲜枸杞去核后混合榨汁去渣后与椰汁混合得果汁,将果汁小火熬煮,同时用细管对果汁里吹气,直至果汁熬至絮酱状得果絮备用;
(4)将步骤(1)所得糊化富锌大米加入麦曲后密封发酵30-35天后得生黄酒,将生黄酒与提取物、中药液在10-15℃下混合均质处理20-25分钟后充填到柔软包装容器中,然后置于高压装置中用水作为加压介质进行400MPa~600MPa的超高压杀菌处理10-15min得原酒,取出后,加入果絮,摇匀混合即得。
