Abstract
本发明公开了一种润肠通便保健粉丝的制作方法,包括以下步骤:先将红薯粉、马铃薯淀粉、荞麦粉和油菜花粉搅拌混合均匀,然后发酵处理,再向其中加入多种混合原料,制成润肠通便保健粉丝;本发明的保健粉丝具有清热解毒、健胃消食、润肠通便和促进代谢的作用,同时还能增强人体免疫力,长期食用治疗消化不良、便秘效果明显,对人体无任何毒副作用。

本发明涉及属于食品加工技术领域,具体涉及一种润肠通便保健粉丝的制作方法。
背景技术
粉丝是我国的常见食品,因其含有丰富的碳水化合物、膳食纤维、蛋白质、烟酸和钙、镁、铁、钾等矿物质,所以自古以来就受到人们的喜欢,现有的粉丝品种比较单一,一般都是由绿豆、红薯等制成,含有的营养成分也比较单一,不能满足人们对粉丝营养多元化的需求,而且也限制了粉丝的各种做法。
发明内容
本发明的目的在于提供一种润肠通便保健粉丝的制作方法。
为了实施上述目的本发明采用如下技术方案:
润肠通便保健粉丝的制作方法,包括以下步骤:
(1)称取红薯粉110-130份、马铃薯淀粉20-30份、荞麦粉8-15份和油菜花粉2-3份搅拌混合均匀,然后加入其总量的0.1-0.2‰酵母菌和10-12%蔗糖,于15℃-30℃温度发酵7-15天,备用;
(2)称取火龙果4-6份、绿茶10-12份、木瓜3.5-4.5份、南瓜花2-3份、杏仁1-2份和桑葚3-5份,放入榨汁机中榨汁,然后放于65-75℃、20-30MPa的压力下均质处理10-20min,均质处理后物料的粒度控制为30-50μm,再向其中加入芝麻4-5份、牛奶5-6份、食盐2-4份混合搅拌均匀,再将混合物置于100-120度的高温下灭菌;
(3)称取火麻仁2-4份、芦荟8-10份、何首乌3-4份和炙甘草1.5-2.5份,加水煎煮2-3次,合并煎煮液,滤过,滤液浓缩,干燥,打成细粉,再向其中加入3-4份玫瑰花粉、1-2份卡拉胶和适量淀粉,充分混匀;
(4)合并上述所有步骤的处理原料;加纯净水调浆,搅拌混合均匀,通过漏粉瓢形成粉丝状,进入蒸煮锅中蒸煮成型,蒸煮温度为95-98℃ ;
(5)冷却:将蒸煮成型的粉丝采用喷淋的方式进行冷却,冷却时间为20-30 分钟;
(6)切段:将冷却好的粉丝根据需要切成相同长度的段即得。
本发明的有益效果:
本发明的保健粉丝具有清热解毒、健胃消食、润肠通便和促进代谢的作用,同时还能增强人体免疫力,长期食用治疗消化不良、便秘效果明显,对人体无任何毒副作用。
具体实施方式
实施例1:润肠通便保健粉丝的制作方法,包括以下步骤:
(1)称取红薯粉120份、马铃薯淀粉25份、荞麦粉10份和油菜花粉2.5份搅拌混合均匀,然后加入其总量的0.15‰酵母菌和10%蔗糖,于15℃-30℃温度发酵7-15天,备用;
(2)称取火龙果5份、绿茶11份、木瓜4份、南瓜花2.5份、杏仁1.5份和桑葚4份,放入榨汁机中榨汁,然后放于70℃、25MPa的压力下均质处理15min,均质处理后物料的粒度控制为40μm,再向其中加入芝麻4.5份、牛奶5.5份、食盐3份混合搅拌均匀,再将混合物置于110度的高温下灭菌;
(3)称取火麻仁3份、芦荟9份、何首乌3.5份和炙甘草2份,加水煎煮2-3次,合并煎煮液,滤过,滤液浓缩,干燥,打成细粉,再向其中加入3-4份玫瑰花粉、1-2份卡拉胶和适量淀粉,充分混匀;
(4)合并上述所有步骤的处理原料;加纯净水调浆,搅拌混合均匀,通过漏粉瓢形成粉丝状,进入蒸煮锅中蒸煮成型,蒸煮温度为95-98℃ ;
(5)冷却:将蒸煮成型的粉丝采用喷淋的方式进行冷却,冷却时间为20-30 分钟;
(6)切段:将冷却好的粉丝根据需要切成相同长度的段即得。
Claims (1)
1.一种润肠通便保健粉丝的制作方法,其特征在于包括以下步骤:
(1)称取红薯粉110-130份、马铃薯淀粉20-30份、荞麦粉8-15份和油菜花粉2-3份搅拌混合均匀,然后加入其总量的0.1-0.2‰酵母菌和10-12%蔗糖,于15℃-30℃温度发酵7-15天,备用;
