Abstract
一种红枣茶菌饮料及其制备方法。具体包括:以红枣为主要原料萃取红枣提取液,然后再以红枣提取液为培养基,以糖为碳源,用红茶菌为菌源,制备出一种新型特色的红枣茶菌饮料。通过实施本发明,将红枣和红茶菌有机结合起来,所组合起来的营养物质更加丰富;红枣和红茶菌对人体疾病都具有显著的保健功效,二者合二为一后,其功效再相辅相成,而形成的茶饮料其保健功效更为彰显。其综合效果远超单纯红枣本身及传统的红茶菌饮料。同时,制备出来的红枣茶菌饮料产品形态理想,产品很好地保留了红枣原有的营养和功能成分,容易消化吸收,口感酸甜适口,适口性非常好,适用人群极为广泛,是一种兼备饮料及有医药功效的双重功能生态保健饮品。

背景技术
红枣,又名大枣,是枣树的成熟果实,经晾、晒或烘烤干制而成,果皮红至***。红枣红枣是一种营养佳品,被誉为“百果之王”。红枣含有丰富的维生素A、B、C等人体必须的多种维生素和18种氨基酸、矿物质,其中维生素C(抗坏血酸)的含量竟高达葡萄、苹果的70~80倍,芦丁(维生素P)的含量也很高,这两种维生素对防癌和预防高血压、高血脂都有一定作用。
红枣性温味甘,含有蛋白质、脂肪、糖、钙、磷、铁、镁及丰富的维生素A、维生素C、维生素B1.维生素B2,此外还含有胡萝卜素等,营养十分丰富,民间有“天天吃红枣,一生不显老”之说。红枣不仅是人们喜爱的果品,也是一味滋补脾胃、养血安神、治病强身的良药。产妇食用红枣,能补中益气、养血安神,加速机体复原;老年体弱者食用红枣,能增强体质,延缓衰老;尤其是一些从事脑力劳动的人及神经衰弱者,用红枣煮汤代茶,能安心守神,增进食欲。素有茶癖的人,晚间过饮,难免辗转不眠,若每晚以红枣煎汤代茶,可免除失眠之苦。春秋季节,乍寒乍暖,在红枣中加几片桑叶煎汤代茶,可预防伤风感冒;夏令炎热,红枣与荷叶同煮可利气消暑;冬日严寒,红枣汤加生姜红糖,可驱寒暖胃。红枣是天然的美容食品,还可益气健脾,促进气血生化循环和抗衰老。
红枣红枣不仅是一种深受老百姓喜爱的食品,也是一味常用的中药。现代药理研究发现,红枣中含有较多的蛋白质、氨基酸、糖类、有机酸、维生素A、维生素B2.维生素C、P等,以及微量元素钙、磷、钾、铁、镁、铝和大量的环磷酸腺苷等。它性温、味甘,具有补脾益气、养血安神、生津液、解药毒、缓和药性的功效。中医很早就有用红枣组方的“养肝汤”来养肝排毒的方法。湖北省中医院脏象肝病研究所所长博士生导师盛国光教授介绍,红枣具有保肝、健脾、降低胆固醇、升高白血球、抗过敏等作用。
红枣粉中含有多种生物活性物质,如大枣多糖、黄酮类、皂苷类、三萜类、生物碱类、环磷酸腺苷(cAMP)、环磷酸乌苷(cGMP)等,对人体有多种保健治病功效。主要体现于:
(1)增强人体免疫力:大枣含有大量的糖类物质,主要为葡萄糖,也含有果糖、蔗糖,以及由葡萄糖和果糖组成的低聚糖、***聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、胡萝卜素、尼克酸等多种维生素,具有较强的补养作用,能提高人体免疫功能,增强抗病能力。
(2)增强肌力,增加体重:实验小鼠每日灌服大枣煎剂,共3周,体重的增加较对照组明显升高,并且在游泳试验中,其游泳时间较对照组明显延长,这表明大枣有增强肌力和增加体重的作用。
(3)保护肝脏:有实验证实,对四氯化碳肝损伤的家兔,每日喂给大枣煎剂共1周,结果血清总蛋白与白蛋白较对照组明显增加,表明大枣有保肝作用。
(4)抗过敏:大枣乙醇提取物对特异反应性疾病,能抑制抗体的产生,对小鼠反应性抗体也有抑制作用,提示大枣具有抗***反应作用。
(5)镇静安神:大枣中所含有黄酮--双-葡萄糖甙A有镇静、催眠和降压作用,其中被分离出的柚配质C糖甙类有中枢抑制作用,即降低自发运动及刺激反射作用、强直木僵作用,故大枣具有安神、镇静之功。
(6)抗癌,抗突变:大枣含多种三该类化合物,其中烨木酸、山植酸均发现有抗癌活性,对肉瘤S-180有抑制作用。枣中所含的营养素,能够增强人体免疫功能,对于防癌抗癌和维持人体脏腑功能都有一定效果。
(7)红枣富含的环磷酸腺苷,是人体能量代谢的必需物质,能增强肌力、消除疲劳、扩张血管、增加心肌收缩力、改善心肌营养,对防治心血管疾病有良好的作用。
(8)红枣具有补虚益气、养血安神、健脾和胃等功效,是脾胃虚弱、气血不足、倦怠无力、失眠等患者良好的保健营养品。
(9)红枣对急慢性肝炎、肝硬化、贫血、过敏性紫癜等症有较好疗效。
(10)红枣含有三萜类化合物及环磷酸腺苷,有较强的抑癌、抗过敏作用。
(11)美白祛斑:红枣中含有非常丰富的维生素C和环-磷酸腺苷,能够促进我们肌肤细胞的代谢,防止黑色素沉着,让我们的肌肤越来越洁白细滑,达到美白肌肤祛斑的美容护肤功效。
(12)延缓衰老:红枣能够养血安神、滋补脾胃,如果年老体弱的人群经常食用红枣的话,能够增强体质、延缓衰老;如果是上班族食用红枣的话,能够增加食欲,缓解紧张的情绪;如果晚上泡一杯红枣茶的话,可以有效的治疗失眠。
(13)防癌、防高血压:红枣含有非常丰富的维生素C和维生素P,这两种维生素对预防高血压、高血脂、防癌有很好的作用。
目前,红枣主要是以干果的形态进行流通并供人食用。同时,以红枣当做中药材来应用。
发明内容
本发明的目的就是提供全新的一种红枣茶菌饮料及其制备方法。具体包括:以红枣为主要原料萃取红枣提取液,然后再以红枣提取液为培养基,以糖为碳源,用红茶菌为菌源,制备出一种新型特色的红枣茶菌饮料。
所述的红茶菌是以茶水、糖为原料,经醋酸菌、酵母菌和乳酸菌等多种微生物共同发酵而成的。其中,红茶菌菌液中含有一部分茶叶的浸出物、活的微生物及其代谢产物,这些物质主要包括葡萄糖酸、醋酸、葡萄糖、果糖、蛋白质、氨基酸、维生素、微量元素、茶多酚、咖啡因、乙醇和二氧化碳等。红茶菌还富含维生素C、维生素B等营养素,并含有多种对人体有益的微生物,因此能调节人体生理机能,促进新陈代谢,帮助消化,防止动脉硬化,抗癌,养生强身,成为一种盛行全世界的养生保健饮料。
红茶菌在中国流传应用已有150余年的历史,近些年国内外医学界应用红茶菌的实践表明,红茶菌能治疗多种慢性疾病,如高血压、动脉硬化、冠心病、糖尿病、便秘、痔疮、肥胖症、斑秃、白发、白内障、风湿性关节炎、胃炎、痢疾、贫血、核黄素缺乏等。
根据营养分析,红茶菌饮料主要营养成分及相应的功能如下:
(1)多糖、茶多酚、低聚异麦芽糖、茶碱:提高人体免疫力,增强自身抵抗力;调节血脂,调节血糖;促进双歧杆菌生长,减少肠道腐败物质和致癌物质;增加T-淋巴细胞和B-淋巴细胞的数量,提高机体的防御能力。
(2)醋酸、乳酸、柠檬酸:清理肠胃,帮助消化,防治便秘,提高维生素的稳定性,预防有害病菌、病毒入侵,预防感冒。
(3)咖啡因:提高大脑活力,消除疲劳,振作精神。
(4)红茶菌中含有三种对人体有益的益生菌:酵母菌,醋酸菌和乳酸菌。对人体可起到特殊的保健作用。

(6)调理肠胃,食欲不振这增加饮食,饭量大增,营养不良者可恢复健康,特别是可使城乡最常见最难治的胃溃疡,十二指肠胃溃疡,胃下垂等胃病痊愈,反胃,呕吐,反酸水等症状消失。
(7)现代医学证明,醋酸具有消除疲劳、增强食欲、帮助消化、防治高血压和动脉硬化的作用,还具有一定的抗肿瘤、防肥胖,使钙易于被人体吸收、保持骨骼的柔韧以及润肌嫩肤的作用。

本发明是通过以下技术方案来实现的:
一种红枣茶菌饮料及其制备方法,技术方案中在于:以红枣为主要原料萃取红枣提取液,然后再以红枣提取液为培养基,以糖为碳源,用红茶菌为菌源,制备出一种新型特色的红枣茶菌饮料。
1、所述的红枣提取液萃取方法如下:
(1)红枣原料采集:采集无农药残留、无变质的红枣为原料;
(2)红枣原料处理:将红枣进行破碎,并将枣核取出得红枣肉;
(3)原料组成及配比:红枣肉1份、清水30份;
(4)萃取:在加热容器内同时放入上述红枣肉和清水,并静置浸泡8~10小时,接着加热至水溶液沸腾,并保持水沸腾直至容器内的水分减少一半,最后经过过滤得到红枣提取液。
2、所述的红枣茶菌饮料制备方法如下:
(1)原料组成及配比:红枣提取液100份、红糖3份、红茶菌种2份;
(2)发酵:将上述红枣提取液、红糖、红茶菌种同时放置于非金属容器里,经过搅拌均匀后进行好氧发酵;
(3)成品:将红枣提取液发酵至溶液的PH到达3.5~4.5而得成品红枣茶菌饮料。
本发明既有如下优点:
1、本发明所提出的红枣茶菌饮料制备方法不但构思新颖,而且配方简单,加工工艺亦很简单,容易实施。
2、实施本发明所用的主要原料——红枣,该原料不但资源丰富,而且容易组织,同时价格低廉。重要的是红枣营养丰富,还具有众多的保健功效,是一种绿色天然的养生果品。
3、制备本发明的菌源——红茶菌,该菌种具有培育方法简单、菌种形成周期短、生产成本低廉、菌种质量稳定等有点;红茶菌中主要含有三种对人体特别有益的益生菌:酵母菌、醋酸菌和乳酸菌,对人体可起到特殊的保健作用;同时,由于红茶菌是用茶叶制备的茶液作为培养基,所以菌液中含有一部分茶叶的浸出物、活的微生物及其代谢产物,这些物质主要包括葡萄糖酸、醋酸、葡萄糖、果糖、蛋白质、氨基酸、维生素、微量元素、茶多酚、咖啡因、乙醇和二氧化碳等。因此,红茶菌不但富含有多种对人体有益的微生物,还含有多种营养物质,能调节人体生理机能、促进新陈代谢、帮助消化、防止动脉硬化、抗癌、养生强身等。
4、通过实施本发明,将红枣和红茶菌有机结合起来,所组合起来的营养物质更加丰富;红枣和红茶菌对人体疾病都具有显著的保健功效,二者合二为一后,其功效再相辅相成,而形成的茶饮料其保健功效更为彰显。其综合效果远超单纯红枣本身及传统的红茶菌饮料。
5、通过实施本发明,所制备出来的红枣茶菌饮料口感酸甜适口,适口性非常好,是一种兼备饮料及有医药功效的双重功能生态保健饮品。
6、通过实施本发明,制备而成的红枣茶菌饮料成本非常低,但由于该饮料营养丰富、保健效果好、物美价廉,适用人群极为广泛,所以市场前景非常好。
7、本发明制作出来的产品形态理想,产品很好地保留了红枣原有的营养和功能成分,容易消化吸收,增强了特殊功能;改变了目前市场上红枣加工产品稀少的现状,解决了红枣的产后出路,并带动红枣相关产业的发展,形成新的经济增长点,具有巨大的经济效益和社会效益。
具体实施方式
下面结合实施例对本发明的方法进一步说明。
一种红枣茶菌饮料及其制备方法,技术方案中在于:以红枣为主要原料萃取红枣提取液,然后再以红枣提取液为培养基,以糖为碳源,用红茶菌为菌源,制备出一种新型特色的红枣茶菌饮料。
