Abstract
本发明涉及一种桃源饮料及其制备方法。桃源饮料采用来源于桃树的原桃胶、桃花提取物、桃汁为主要原料,主要制备步骤为:(1)制备原桃胶分散体系,(2)制备桃花提取物,(3)原料混合、定容、均质,(4)杀菌和包装。本发明涉及的桃源饮料中,桃源原料的结合使饮料营养成分相互补充,不仅为人体提供全面丰富的营养,而且还具有促进人体肠道有益菌的增殖、增强人体排毒功能、抑制形成黑色素关键酶酪氨酸酶的活性、调控人体新陈代谢的作用。本发明理念新颖、实用性强,具有很广阔的市场推广前景。
Description
技术领域
本发明涉及一种液体饮料及其制备方法,具体涉及一种以桃树产物为主要原料的饮料及其制备方法,属于食品加工技术领域。
背景技术
原桃胶是桃树、李树等蔷薇科植物在树干受伤部位分泌的一种可食用的半透明植物胶,原桃胶性平、味微苦,主要成分是桃胶多糖,含量达到90%以上,是一种不可多得的高纯度天然植物胶资源,溶于水后是分散性较好的胶体,具有清除结石、稳定餐后血糖水平、促进肠道有益菌的增殖、改善免疫功能、驻颜美容等功效。
桃汁性微热、味甘酸,富含果糖、果胶、维生素及矿物质,尤其是维生素C和B族维生素含量很高,铁的含量更是苹果的4~6倍,具有补益气血、养阴生津、润肠通便等功效。
桃花性平、味苦、无毒,主要活性成分有山奈酚、香豆精、三叶豆苷、柚皮素、维生素及微量元素,具有活血养血、利水通便、美容养颜等功效,是我国传统的美容养颜佳品,桃花在美容养颜方面的功效已得到普遍认可和验证。
在我国,桃子及桃树副产物产量大、采收便利,但原桃胶和桃花的利用率很低。目前,大部分原桃胶产生后直接遗留在树干上或自行脱落到树下,极少被人为的收集起来使用。桃花是疏花过程中是产量较大的副产物,大部分被直接丢在地头或者树下,这些都直接造成资源的浪费。
在食品领域,由于原桃胶粘度较大、很难溶于水,主要通过蒸煮或者作为某些中成药的配料等方式食用;桃花主要通过制成花茶饮用或放在粥里面直接食用;因此,目前原桃胶及桃花在食品工业中的应用并不广泛。
发明内容
本发明提供了一种桃源饮料。本发明中桃源的定义为:原桃胶、桃花以及桃汁三种来源于桃树的原料。
本发明同时还提供一种桃源饮料的制备方法,为原桃胶的开发利用提供了新领域,为桃源产品的开发提供了新的思路。
本发明所涉及的份数,除特别说明外均为质量份数。
本发明采用以下的制作步骤:
1、原桃胶分散体系的制备:
本发明将原桃胶浸涨去杂后,经物理方法研磨,形成分散均匀的胶体溶液,并将其应用在饮料中。具体方法如下:
挑选杂质较少的原桃胶,加入纯净水,料液质量体积比(g/mL)为1~5:100,常温下浸泡溶胀6~10个小时,循环使用浸胀用水去除杂质;去除杂质的原桃胶中加入纯净水,原桃胶与纯净水的质量体积比(g/mL)为1~2:500;用胶体磨研磨,研磨后的原桃胶粒径小于1μm,由于原桃胶并不溶于水,因此得到的是分布均匀的原桃胶分散体系,分散相为原桃胶、分散介质为纯净水。
去除杂质,可以使用超滤膜、尼龙膜、陶瓷膜过滤,也可以使用真空抽滤器、离心分离机等进行过滤。
2、桃花提取物制备:
将干桃花研磨成粒径在150μm以下的微粒,可以过100目筛来选择;研磨过程可以手动研磨或使用粉碎机研磨。
将研磨好的桃花微粒取2份加入到具塞烧瓶中,加入100份55%~65%的乙醇溶液,室温浸泡5~10min;然后置于37℃~55℃恒温振荡器中进行震荡提取,震荡频率为80~150rpm,震荡时间为2.5~3小时,重复提取一次,得到提取液;提取液加入到旋转蒸发仪中,进行减压蒸馏,旋转速度为60~80rpm,将提取液旋蒸到原来的1/4~1/3,即得到桃花提取物。
所述旋转蒸发仪也可用工业上的降膜式或升膜式蒸发器、真空浓缩设备、冷冻浓缩机等设备代替。
3、配料:
在调配器中加入甜味剂、增稠剂、原桃胶分散体系、桃花提取物和桃汁等主原料搅拌,再加入酸味调节剂、防腐剂等辅料,加水定容,形成饮料混合原液。为了增加产品的亲和性与口感,将饮料混合原液加入到高压匀质机中进行两次高压均质,即得到桃源饮料。
4、杀菌和包装:
将步骤3中得到的桃源饮料在115~137℃条件下进行高温灭菌3~6秒,冷却后进行灌装,干燥后进行贴标、包装、入库。
本发明所涉及的饮料配方为:100份饮料中,原桃胶分散体系80~85份,桃汁5~7份,桃花提取物0.3~0.5份,甜味剂2~3份,酸味调节剂0.08~0.15份,余量为水。
其中,桃汁采用不添加任何添加剂的方法制备:将洗净去核的鲜桃加热、打浆、去除果皮、加水稀释,即得到桃汁。桃汁制备工艺简便,也可以从市场上直接购买。
甜味剂为三氯蔗糖、功能性低聚糖、葡萄糖、果糖、乳糖、果葡糖浆、糖醇类甜味剂、安赛蜜、阿斯巴甜、甜菊糖、蔗糖和麦芽糖中的一种或多种组合;优选地,三氯蔗糖与功能性低聚糖(包括低聚果糖和/或低聚异麦芽糖)的质量比为1.3~1.5:220~260。
酸味调节剂为维生素C、柠檬酸、柠檬酸钠和苹果酸中的一种或多种组合;优选地,柠檬酸钠、柠檬酸和维生素C质量比为1:7.0~7.5:9.0~9.5。
进一步地,本发明饮料配方中可以添加防腐剂和/或增稠剂。
其中,防腐剂为苯甲酸钠和/或山梨酸钾。
增稠剂为羧甲基纤维素、果胶和结冷胶中的一种或多种组合。
本发明所涉及的饮料可以是单独存在的,也可以包含额外组分,例如碳酸类饮料、茶饮料、乳类饮品、能量饮料或其组合。
本发明中所涉及的桃源饮料,主要原料都来源于桃树,目前市场上还没有类似配方的产品出售。原桃胶成分可增加饮料的口感厚度和滑腻度,同时具有增强人体排毒功能、调节血糖、增强免疫力等功效;桃花提取物可抑制形成黑色斑点关键酶酪氨酸酶的活性,增强抗氧化活性;桃汁中含有维生素、矿物质、膳食纤维等营养成分,具有调理肠道、益气补血、美容养颜等功效。
本发明对原桃胶、桃花、桃汁进行二次加工,添加可增加口感的可食用添加剂,加工过程中最大限度保持各种成分营养与色泽,制备出将三者综合在一起的桃源饮料,而非将三者简单叠加。桃源饮料可使原桃胶、桃花、桃汁的营养成分相互补充,为人体提供较全面的营养,还具有较好的排毒养颜功效。
本发明所涉及的桃源饮料另一方面还减少了资源的浪费,增加桃树副产物的经济价值,并为原桃胶和桃花的利用与产品开发提供新的思路。
具体实施方式
下面通过具体实施例,进一步对本发明的技术方案进行具体说明。应该理解,下面的实施例只是作为具体说明,而不限制本发明的范围,同时本领域的技术人员根据本发明所做的显而易见的改变和修饰也包含在本发明范围之内。
实施例1
桃源饮料的制备步骤如下:
1、原桃胶分散体系的制备:挑选杂质较少的原桃胶100g,常温浸泡在40L的纯净水中溶胀,浸泡时间为8个小时,循环使用浸胀用水去除杂质;去除杂质的原桃胶中加入50L水,用胶体磨研磨,得到分布均匀的原桃胶分散体系;
2、桃花提取物制备:将干桃花用粉碎机研磨成粒径在150μm以下的微粒,称取20g桃花微粒,放入具塞烧瓶中,加入1L 60%的乙醇溶液,室温浸泡10min,然后置于50℃恒温振荡器中进行震荡提取,震荡频率为90rpm,提取时间为2.5小时,重复提取一次;提取液用旋转蒸发仪减压蒸馏,旋转速度为75rpm,将提取液旋蒸到原液体的1/4,得到桃花提取物。
3、配料:在调配容器中加入阿斯巴甜、麦芽糖和蔗糖,按质量比2:1:50组成的甜味剂2.5份、原桃胶分散体系85份、桃花提取物0.5份和桃汁6份搅拌,再加入由柠檬酸、苹果酸、柠檬酸钠和维生素C按质量比10:2:2:1组成的酸味调节剂0.12份,加水定容,形成饮料混合原液,加入到高压均质机中进行两次高压均质,即得到桃源饮料。
4、杀菌和包装:将步骤3中得到的桃胶饮料在115~137℃条件下进行高温灭菌3~6秒,冷却后进行灌装,干燥后进行贴标、包装、入库。
实施例2
桃源饮料的制备步骤如下:
1、原桃胶分散体系的制备:挑选杂质较少的原桃胶100g,常温浸泡在25L的纯净水中溶胀,浸泡时间为8个小时,循环使用浸胀用水去除杂质;去除杂质的原桃胶中加入25L水,用胶体磨研磨,得到分布均匀的原桃胶分散体系;
2、桃花提取物制备:将干桃花用粉碎机研磨成粒径在150μm以下的微粒,称取20g桃花微粒,放入具塞烧瓶中,加入1L 60%的乙醇溶液,室温浸泡10min,然后置于50℃恒温振荡器中进行震荡提取,震荡频率为90rpm,提取时间为2.5小时,重复提取一次;提取液用旋转蒸发仪减压蒸馏,旋转速度为75rpm,将提取液旋蒸到原液体的1/4,得到桃花提取物。
3、配料:在调配器中加入由三氯蔗糖和低聚异麦芽糖按质量比1.3:220组成的甜味剂2份、原桃胶分散体系80份、桃花提取物0.3份和桃汁7份搅拌,再加入由柠檬酸钠、柠檬酸和维生素C按质量比1:7:9组成的酸味调节剂0.1份,加水定容,形成饮料混合原液,加入到高压均质机中进行两次高压均质,即得到桃源饮料。
4、杀菌和包装:将步骤3中得到的桃胶饮料在115~137℃条件下进行高温灭菌3~6秒,冷却后进行灌装,干燥后进行贴标、包装、入库。
实施例3
桃源饮料的制备步骤如下:
1、原桃胶分散体系的制备:挑选杂质较少的原桃胶100g,常温浸泡在40L的纯净水中溶胀,浸泡时间为8个小时,循环使用浸胀用水去除杂质;去除杂质的原桃胶中加入50L水,用胶体磨研磨,得到分布均匀的原桃胶分散体系;
2、桃花提取物制备:将干桃花用粉碎机研磨成粒径在150μm以下的微粒,称取2kg桃花微粒,放入具塞烧瓶中,加入100L 60%的乙醇溶液,室温浸泡10min,然后置于50℃恒温振荡器中进行震荡提取,震荡频率为90rpm,提取时间为2.5小时,重复提取一次;提取液加入到膜式蒸发仪中处理,得到桃花提取物。
3、配料:在调配器中加入由甜菊糖和三氯蔗糖按质量比2:1组成的甜味剂2份、果胶0.003份、原桃胶分散体系85份、桃花提取物0.3份和桃汁7份,再加入由柠檬酸和柠檬酸钠按质量比5:1组成的酸味调节剂0.12份、山梨酸钾0.0005份,加水定容,形成饮料混合原液,加入到高压均质机中进行两次高压均质,即得到桃源饮料。
4、杀菌和包装:将步骤3中得到的桃胶饮料在115~137℃条件下进行高温灭菌3~6秒,冷却后进行灌装,干燥后进行贴标、包装、入库。
Claims (4)
1.一种桃源饮料的制备方法,其特征在于:100份饮料中,原桃胶分散体系80~85份,桃汁5~7份,桃花提取物0.3~0.5份,甜味剂2~3份,酸味调节剂0.08~0.15份,余量为水;
其中,所述甜味剂为三氯蔗糖与功能性低聚糖,二者质量比为1.3~1.5:220~260;所述酸味调节剂为柠檬酸钠、柠檬酸和维生素C的组合物,其质量比为1:7.0~7.5:9.0~9.5;
其步骤如下:
(1)原桃胶分散体系的制备:
挑选杂质较少的原桃胶,加入纯净水,料液质量体积比g/mL为1~5:100,常温下浸泡溶胀6~10个小时,循环使用浸胀用水去除杂质;去除杂质的原桃胶中加入纯净水,原桃胶与纯净水的质量体积比g/mL为1~2:500;用胶体磨研磨,研磨后的原桃胶粒径小于1μm,得到分布均匀的原桃胶分散体系;
(2)桃花提取物制备:
将干桃花研磨成粒径在150μm以下的微粒,取2份加入到具塞烧瓶中,加入100份55%~65%的乙醇溶液,室温浸泡5~10min;然后置于37℃~55℃恒温振荡器中进行震荡提取,震荡频率为80~150rpm,震荡时间为2.5~3小时,重复提取一次,得到提取液;提取液加入到旋转蒸发仪中蒸馏,旋转速度为60~80rpm,将提取液旋蒸到原来的1/4~1/3,即得到桃花提取物;
(3)配料:
在调配器中加入甜味剂、原桃胶分散体系、桃花提取物和桃汁搅拌,再加入酸味调节剂,加水定容,形成饮料混合原液;再将饮料混合原液加入到高压均质机中进行两次高压均质,即得到桃源饮料;
(4)杀菌和包装:
将步骤(3)中得到的桃源饮料在115~137℃条件下进行高温灭菌3~6秒,冷却后进行灌装,干燥后进行贴标、包装、入库。
2.根据权利要求1所述的桃源饮料的制备方法,其特征在于:步骤(1)所述去除杂质的方法是过滤,所述过滤的方法为:使用超滤膜、尼龙膜、陶瓷膜过滤,或使用真空抽滤器、离心分离机进行过滤。
3.根据权利要求1所述的桃源饮料的制备方法,其特征在于:步骤(2)所述研磨的干桃花,用100目筛选择;研磨方法为手动研磨或粉碎机研磨。
4.根据权利要求1所述的桃源饮料的制备方法,其特征在于:步骤(2)所述旋转蒸发仪用降膜式或升膜式蒸发器、真空浓缩设备、冷冻浓缩机等设备来替代。
