Abstract

益生性微生物(下文为“益生菌”)是通过改善宿主肠道微生物平衡有益地影响宿主的微生物。通常,认为这些微生物抑制或影响肠道中病原菌的生长和/或代谢。益生菌还可以激活宿主的免疫功能。出于这个原因,已经存在将益生菌包括在食品中的许多不同方法。

可以随后将纤维掺合物包装并且贮藏在维持益生菌的生存力和纤维掺合物的水活度的条件下(例如氮气氛)。例如,包装可以在氮冲洗下进行以最小化来自加工室空气的氧和湿气。可以在包装物中使用高品质隔湿材料。如上文表征的包装的目的是在纤维掺合物的贮存期限期间维持优选的水活度值。所包装产品的贮存期限(例如就益生菌的生存力而言)可以直到12个月并且更长。
此纤维掺合物可以轻易地并入任何适合的药物制剂或营养制剂(例如,营养药)、膳食补充剂、功能性食物和饮料产品中。例如,可以通过纤维掺合物来丰富人用食物和饮料以及宠物食物。饮料产品的合适实例包括但不限于水、水基乳饮料、乳基饮料、碳酸饮料、非碳酸饮料、啤酒、葡萄酒、豆奶和果基饮料,如橙汁。针对每种目的的营养配方可以包括所述纤维掺合物。存在种类庞大的营养配方,例如针对运动员或选手,针对具有特殊营养需求的人,如对某些天然食物组分过敏的人或患有肠胃病的人等。
焙烤物、巧克力或其他甜品可以包含所述纤维掺合物。此外,全部类型的挤出或烹制或准备好的食品可以包括所述纤维掺合物。例如,可以使用干燥产品,如干燥的宠物食品或其他干燥的食品如粉末、面粉、乳粉或谷物粉或谷物片。可以将所述纤维掺合物并入全部类型的早餐谷物中。此外,可以将所述纤维掺合物添加至可消费产品的各种组分、成分或起始材料。
在一个实施方案中,该纤维掺合物还包含由益生菌在发酵过程期间产生的代谢物。例如,这些代谢物可以被释放至发酵的培养基或它们可以贮藏于微生物内。所述代谢物可以包括特定益生菌的部分或许多有益作用。该营养组合物还可以包含一种或多种成分,如维生素、矿物质、蛋白质、生物活性物质或它们的组合。

生物活性化合物或提取物可以包括已知具有健康益处,尤其用于降低哺乳动物中血胆固醇水平的那些物质,如他汀类、胆酸螯合剂、尼克酸或纤维酸(fibricacid),和/或用于治疗糖尿病的那些物质,如磺酰脲类、双胍类、α-葡糖苷酶抑制剂、噻唑烷二酮类、氯茴苯酸类或D-苯丙氨酸和其他植物营养物和抗氧化剂。
如本文所用的,植物营养物的非限制性实例包括类黄酮类和同族酚类和多酚类化合物、类萜如类胡萝卜素,和生物碱,包括姜黄素、柠檬苦素和槲皮素,和它们的组合。
如本文所用,术语“抗氧化剂”是优选地理解为包括抑制氧化或由活性氧类(ROS)和其他自由基类和非自由基类促发的反应的多样物质中的任意一种或多种(如β-胡萝卜素(维生素A前体)、维生素C、维生素E和硒)。另外,抗氧化剂是能够减缓或防止其他分子氧化的分子。抗氧化剂的非限制性实例包括类胡萝卜素、辅酶Q10(“CoQ10”)、类黄酮、谷胱甘肽Goji(Wolfberry)、橙皮苷、Lactowolfberry、木脂体类、叶黄素、番茄红素、多酚类、硒、维生素A、维生素B1、维生素B6、维生素B12、维生素C、维生素D、维生素E和它们的组合。
本公开的营养组合物可以任选地包括常规的食品添加剂,如乳化剂、稳定剂、甜味剂、调味剂、着色剂、防腐剂、螯合剂、渗透剂、缓冲剂或pH调节剂、酸化剂、增稠剂和调质地剂(texturizer)等的任一种。
取决于特定性和偏好,包含所述纤维掺合物的营养组合物可以以考虑益生菌cfu基本上不损失的方式暴露于室温或升高的温度。还可以冷冻该营养组合物,这取决于其性质或最终食品的目的。另一种方法是在不冷冻的情况下冷藏。当然,取决于终产品或营养组合物的目的,可以对营养组合物作出其他进一步处理或加工。一个实例是用惰性气体或气体混合物如N2或N2/CO2对最终营养组合物充气。
本公开的营养组合物可以在医学专业人员的监督下施用或可以自行施用。本公开的营养组合物可以每日、每周或每月施用,或可以每年施用或施用更长时间。合适的每日剂量方案可以包括每日一份施用物或多份施用物。
可以安全地消费并入根据本公开实施方案的纤维掺合物的药物、食物或饮料。本公开的实施方案中的纤维掺合物和营养组合物可以特别适用于以下情况:
控制炎性肠病
控制肠激惹综合征
化疗诱导的腹泻
放疗诱导的腹泻
化疗-放疗联合诱导的腹泻
减轻湿疹和其他特应性疾病
调节IgE
维持SIgA以减轻感染
减轻***反应和过敏反应

实施例
通过举例方式并且不加以限制,以下实施例说明本公开的多个实施方案。
实施例1
益生菌在具有粉末纤维(见表1)和益生菌(路氏乳杆菌)的常见纤维掺合物(例如和)中的生存力与该益生菌在具有团聚的纤维细粒和益生菌(见表2)的改良纤维掺合物中的生存力比较。结果在图2中显示。如图2和所述表中所见,数据显示改良纤维掺合物的水活度维持在较低的水平,这允许随时间推移更好地维持益生菌组分的生存力。益生菌的量是1X 108CFU/小袋,这是定义的路氏乳杆菌有效剂量。

本发明的一个实施方案意图包括完全营养产品。如本文所用,“完全营养”优选地是这样的营养产品,其含有充足类型和水平的大分子养分(蛋白质、脂肪和糖)和小分子养分以足够作为正在施用该营养产品的动物的唯一营养源。患者可以从这种完全营养组合物获得其100%的营养需要。

本发明的一个实施方案意图用于长期施用。如本文所用,“长期施用”优选地是连续施用多于6周。

Claims (23)
1.营养组合物,其包含纤维掺合物,所述纤维掺合物包含团聚的纤维细粒和益生菌,所述纤维掺合物具有小于约0.2的水活度。
2.根据权利要求1所述的营养组合物,其中所述纤维掺合物的水活度小于约.15。
3.根据权利要求1所述的营养组合物,其中团聚的纤维细粒包含选自以下的纤维:低聚果糖、菊糖、低聚半乳糖、部分水解的瓜尔胶、半乳甘露聚糖、***胶、果胶、***半乳聚糖、β-葡聚糖、黄原胶和它们的组合。
4.根据权利要求1所述的营养组合物,其中团聚的纤维细粒包含范围在约1.2mm至约5mm之间的平均直径。
5.根据权利要求1所述的营养组合物,其中所述纤维掺合物的水活度小于约.12。
6.根据权利要求1所述的营养组合物,其中所述益生菌选自气球菌属(Aerococcus)、曲霉属(Aspergillus)、芽孢杆菌属(Bacillus)、拟杆菌属(Bacteroides)、双歧杆菌属(Bifidobacterium)、假丝酵母属(Candida)、梭菌属(Clostridium)、德巴利酵母属(Debaromyces)、肠球菌属(Enterococcus)、梭杆菌属(Fusobacterium)、乳杆菌属(Lactobacillus)、乳球菌属(Lactococcus)、明串珠菌属(Leuconostoc)、蜜蜂球菌属(Melissococcus)、微球菌属(Micrococcus)、毛霉属(Mucor)、酒球菌属(Oenococcus)、片球菌属(Pediococcus)、青霉属(Penicillium)、消化链球菌属(Peptostrepococcus)、毕赤酵母属(Pichia)、丙酸杆菌属(Propionibacterium)、假链状菌属(Pseudocatenulatum)、根霉属(Rhizopus)、酵母属(Saccharomyces)、葡萄球菌属(Staphylococcus)、链球菌属(Streptococcus)、球拟酵母属(Torulopsis)、魏斯氏菌属(Weissella)或它们的组合。
7.根据权利要求1所述的营养组合物,其中所述益生菌选自路氏乳杆菌(Lactobacillus reuteri)、鼠李糖乳杆菌(Lactobacillus rhamnoses)、植物乳杆菌(Lactobacillus plantarum)和它们的组合。

9.根据权利要求1所述的营养组合物,其中所述纤维掺合物还包含由益生菌在发酵过程期间产生的代谢物。
10.根据权利要求1所述的营养组合物,还包含选自以下的成分:维生素、矿物质、蛋白质、生物活性物质、植物营养物、抗氧化剂和它们的组合。
11.根据权利要求1所述的营养组合物,其中所述营养组合物处于选自药物制剂、营养制剂、膳食补充剂、功能性食物和饮料产品的可施用形式。
12.用于制造营养组合物的方法,所述方法包括:
提供纤维;
使所述纤维团聚以产生水活度小于0.2的团聚的纤维细粒;
将益生菌与团聚的纤维细粒混合以产生纤维掺合物。
13.根据权利要求12所述的方法,还包括在氮气氛中贮藏所述纤维掺合物。
14.根据权利要求12所述的方法,其中与团聚的纤维细粒混合之前,所述纤维与粉末形式的纤维预混合。
15.根据权利要求12所述的方法,其中团聚的纤维细粒包含选自以下的纤维:低聚果糖、菊糖、低聚半乳糖、部分水解的瓜尔胶、半乳甘露聚糖、***胶、果胶、***半乳聚糖、β-葡聚糖、黄原胶和它们的组合。

20.根据权利要求12所述的方法,其中所述益生菌选自路氏乳杆菌、鼠李糖乳杆菌、植物乳杆菌和它们的组合。
21.根据权利要求12所述的方法,其中所述益生菌是路氏乳杆菌。
