BESCHREIBUNG
Die Erfindung betrifft ein Verfahren nach dem Oberbegriff des Anspruches 1.
Es existieren verschiedene Verfahren, insbesondere zur Debakterisierung von Kakao und/oder zur Qualitätsverbesserung. Sie behandeln den Kakao entweder in gemahlenem Zustand, also als flüssige Masse, oder in Form von Bohnen.
Allen ist gemeinsam: - dass es sich hierbei um thermische Verfahren mit oder ohne Wasser- bzw. Dampfzugabe handelt; - dass bei Behandlung des Produktes mit zu hoher Tem- peratur und/oder zu langer Verweilzeit zwecks besserer Debakterisierung die Qualität des Produktes Schaden leidet; - dass bei gegebenen Parametern die Keimzahl jeweils um eine bestimmte Potenz abnimmt.
In anderen Worten heisst dies, dass bei einer hohen Ausgangskeimzahl die Keimzahl nach der Behandlung relativ hoch bleibt und bei einer niederen Ausgangskeimzahl, durch die Behandlung eine relativ niedrige Keimzahl, jedoch kaum die Keimzahl 0 erzielt werden kann; - dass die entsprechenden Anlagen hinsichtlich sowohl ihrer Anschaffungs- als auch ihrer Betriebskosten, aufwendig sind.
Aufgabe der vorliegenden Erfindung ist, ein Verfahren anzugeben, das eine effiziente Debakterisierung genannter Produkte ohne deren Schädigung ermöglicht. Dabei wird eine Produktverbesserung mit einer erheblichen Reduktion der Keimzahlen im Produkt, sowie auch mit einer merklichen Verringerung des Aufwandes für den Prozess angestrebt.
Das Verfahren gemäss der Erfindung ist durch die im Kennzeichen des Patentanspruches 1 angegebenen Prozessparameter charakterisiert.
Ein derartiges Vorgehen bei der Debakterisierung der besagten Produkte gestattet eine Herabsetzung der Keimzahlen in denselben von mehreren Millionen je Gramm des Produktes auf 0 ohne Beschädigungsgefahr für das letztere. Die Realisierung des erfindungsgemässen Verfahrens bedingt auch einen verhältnismässig geringen Kostenaufwand.
Das Produkt nimmt während der Behandlung mehr oder weniger Feuchtigkeit auf. Die Feuchtigkeitsaufnahme ist von den jeweils eingestellten Parametern für Zeit, Temperatur und Druck sowie davon abhängig, ob das Produkt vorgewärmt worden ist oder nicht. Die Feuchtigkeitsaufnahme beim kalten Ausgangsprodukt (20 bis 25 C) beträgt ca. 3%.
Sie ist aber vorwiegend peripher und hat aus diesem Grund, und weil die Bohnen nach der Behandlung eine Temperatur von 85 C aufweisen, bei den in der Regel nachfolgenden Röst- bzw. Trocknungsvorgängen kaum eine Leistungsreduktion zur Folge.
Derart behandelte Kakaobohnen werden anschliessend vorteilhaft einer Kurzzeit-Hochtemperaturbehandlung, d.h.
20 bis 60 Sekunden lang, Temperaturen von 200 bis 300 C, unterworfen. Die Schalen lösen sich dabei weitgehend von den Kernen. Es entsteht dadurch ferner, weil die Kerne noch relativ zäh sind, die Schalen jedoch sehr spröde sind, beim Brechen ein erwünschter, grobkörniger Kernbruch.
Massnahmen zu einer besonders zweckmässigen weiteren Ausgestaltung des erfindungsgemässen Verfahrens sind den abhängigen Patentansprüchen 2 bis 5 entnehmbar.
Die Erfindung bezieht sich auch auf Vorrichtungen zur Durchführung des Verfahrens. Sie sind je nach der Beschaffenheit des zu behandelnden Produktes und/oder der der Debakterisierung vor- und nachgeschalteten Behandlungsstufen entweder für eine kontinuierliche oder eine chargenweise erfolgende Arbeitsweise vorgesehen. Bei einer Vorrichtung erster Art sind die Merkmale des Anspruches 6 vorgesehen.
Die Merkmale der Vorrichtung zweiter Art sind dem Anspruch 8 zu entnehmen.
Die Erfindung wird beispielsweise anhand einer bevorzugten Ausführungsform der Vorrichtung erster Art gemäss der Zeichnung näher erläutert.
Die einzige Figur stellt schematisch eine Fördereinrichtung dar. Sie besteht aus einem zylindrischen Trog oder Rohr 1 und einer im letzteren drehbar gelagerten Förderschnecke 2. Am antriebsseitigen Ende der hohlen und mit einer Anzahl von Öffnungen ausgebildeten Welle der Förderschnecke 2, ist eine Dampfzuführung 3 für überhitzten Dampf UH vorgesehen. Der Dampf könnte natürlich auch durch eine entsprechende Anzahl in die Rohrwand eingearbeiteter Öffnungen zugeführt werden. Das Rohr 1 ist mit einer thermischen Isolation 4 umhüllt.
Ein Beschickungstrichter 5 ist ebenfalls am antriebsseitigen Ende und ein Entleerungsstutzen 6 am gegenüberliegenden Ende des Rohres 1 angeordnet. Es schliessen sich der Beschickungstrichter 5 über eine Kammer 7 mit einem Dop pelschieber an das Rohr 1 und den Entleerungsstutzen 6 an eine ebenfalls mit einer Doppelschieber versehene weitere Kammer 8 an. Die beiden Kammern 7 und 8 weisen je einen Vakuumanschluss 9 und 10 auf, um das Einschleusen von Luft in das Rohrinnere zu verhindern oder wenigstens zu reduzieren. Dadurch lassen sich im behandelten Produkt Lufteinschlüsse und die damit zusammengehende, partiell ungenügende Debakterisierung vermeiden.
Das Rohr 1 ist so ausgelegt, dass es Betriebsdrücke vorzugsweise zwischen 1,5 und 5 bar, in speziellen Fällen jedoch bis 20 bar, aufnehmen kann. Bei gegebenen Abmessungen des Rohres 1 soll dessen Füllgrad der jeweils gewünschten Verweilzeit entsprechend gewählt werden.
Für die Beschickung und Entleerung der Vorrichtung könnte auch je eine genügend dichtende Zellenradschleuse eingesetzt werden.
Die Einschleusungseinrichtungen werden durch eine geeignete Dosiereinrichtung beschickt, der nicht Gegenstand der Erfindung ist.
Die Abführung des behandelten Produktes erfolgt in der Regel direkt oder über einen Zwischenbehälter in einen Röster oder Trockner.
Die Entlüftung kann dadurch geschehen, dass die der Beschickung dienende Kammer 7 während der Verweilzeit des Produktes unter Vakuum gesetzt wird. Ein noch besseres Resultat lässt sich erzielen, wenn die beiden Kammern 7 und 8 alternierend in Übereinstimmung mit dem Befüllungs- und Entleerungsrhythmus derselben evakuiert werden.
Zur Ausführung der erfindungsgemässen Debakterisierungsmethode können auch andersartige Apparaturen zum Einsatz gelangen. Eine in der Zeichnung nicht gezeigte Vorrichtung zweiter Art könnte ein Behälter, gebaut für die Betriebsdrücke bis 5 bar, in speziellen Fällen jedoch bis 20 bar, und ausgerüstet je mit einer Einfüll- und einer Entleerungs öffnung, mit einer Dampfzuführung, einem Kondensat- und einem Dampfablass und schliesslich einer thermischen Aussenisolation, umfassen. Vorzugsweise wäre ein rotierender Behälter ohne Rührwerk und gegebenenfalls mit Doppelmantel vorzusehen.
Zwecks Verbesserung des Debakterisierungseffektes sollte die Dampfzuführung derart angeordnet sein, dass der einströmende UH-Dampf das Produkt gründlich durchdringt und bei noch nicht vollständig geschlossenem Deckel des Behälters aus diesem die Luft weitgehend verdrängt. Dadurch lässt sich auf effiziente und wirtschaftliche Art und Weise ein Evakuieren des Behälters mittels einer Vakuumpumpe umgehen.

There are various methods, in particular for the debacterization of cocoa and / or for quality improvement. They treat cocoa either in the ground state, i.e. as a liquid mass, or in the form of beans.
They all have in common: - that these are thermal processes with or without the addition of water or steam; - that if the product is treated with too high a temperature and / or too long a dwell time for the purpose of better debacterization, the quality of the product will suffer; - that given the parameters, the bacterial count decreases by a certain potency.
In other words, this means that if the initial number of bacteria is high, the number of bacteria remains relatively high after treatment and if the number of initial bacteria is low, a relatively low number of bacteria can be achieved by treatment, but the number of bacteria 0 can hardly be achieved; - That the corresponding systems are expensive in terms of both their acquisition and operating costs.
The object of the present invention is to provide a method which enables the efficient debacterization of said products without damaging them. The aim is to improve the product with a significant reduction in the number of bacteria in the product, as well as with a noticeable reduction in the effort for the process.
The method according to the invention is characterized by the process parameters specified in the characterizing part of patent claim 1.
Such a procedure in the debacterization of the said products allows a reduction in the bacterial count in the same from several million per gram of the product to 0 without risk of damage to the latter. The implementation of the method according to the invention also requires a relatively low cost.
The product absorbs more or less moisture during the treatment. Moisture absorption depends on the parameters set for time, temperature and pressure as well as whether the product has been preheated or not. The moisture absorption in the cold starting product (20 to 25 C) is approx. 3%.
However, it is predominantly peripheral and for this reason, and because the beans have a temperature of 85 C after the treatment, there is hardly any reduction in performance in the subsequent roasting or drying processes.
Cocoa beans treated in this way are then advantageously subjected to a short-term high-temperature treatment, i.e.
Subjected to temperatures of 200 to 300 C for 20 to 60 seconds. The shells largely detach from the cores. It also arises because the cores are still relatively tough, but the shells are very brittle, a desired, coarse-grained core breakage when broken.
Measures for a particularly expedient further embodiment of the method according to the invention can be found in the dependent claims 2 to 5.
The invention also relates to devices for carrying out the method. Depending on the nature of the product to be treated and / or the treatment stages upstream and downstream of the debacterization, they are intended for either continuous or batch-wise operation. In a device of the first type, the features of claim 6 are provided.
The features of the device of the second type can be found in claim 8.
The invention is explained in more detail, for example, using a preferred embodiment of the device of the first type according to the drawing.
The only figure schematically represents a conveyor device. It consists of a cylindrical trough or tube 1 and a conveyor screw 2 rotatably mounted in the latter. At the drive end of the hollow shaft of the conveyor screw 2, which shaft has a number of openings, there is a steam feed 3 for overheated Steam UH provided. The steam could of course also be supplied through a corresponding number of openings made in the tube wall. The tube 1 is covered with a thermal insulation 4.
A feed hopper 5 is also arranged at the drive end and an emptying nozzle 6 at the opposite end of the tube 1. There the hopper 5 via a chamber 7 with a double pelschieber to the tube 1 and the discharge nozzle 6 to another chamber 8 also provided with a double slide. The two chambers 7 and 8 each have a vacuum connection 9 and 10 in order to prevent or at least reduce the introduction of air into the interior of the pipe. As a result, air inclusions and the associated, inadequate debacterization can be avoided in the treated product.
The tube 1 is designed so that it can accept operating pressures preferably between 1.5 and 5 bar, but in special cases up to 20 bar. Given the dimensions of the tube 1, its degree of filling should be selected in accordance with the desired residence time.
A sufficiently sealing cellular wheel sluice could also be used for loading and emptying the device.
The sluice-in devices are fed by a suitable metering device, which is not the subject of the invention.
The treated product is usually discharged directly or via an intermediate container into a roaster or dryer.
The ventilation can be done by placing the chamber 7 serving the feed under vacuum during the dwell time of the product. An even better result can be achieved if the two chambers 7 and 8 are alternately evacuated in accordance with their filling and emptying rhythm.
Other types of apparatus can also be used to carry out the debacterization method according to the invention. A device of the second type, not shown in the drawing, could be a container built for the operating pressures up to 5 bar, but in special cases up to 20 bar, and equipped with a filling and an emptying opening, with a steam supply, a condensate and one Steam discharge and finally thermal external insulation. A rotating container without an agitator and possibly with a double jacket would preferably be provided.
In order to improve the debacterization effect, the steam supply should be arranged in such a way that the inflowing UH steam penetrates the product thoroughly and largely displaces the air from the container when the cover is not yet fully closed. Evacuation of the container by means of a vacuum pump can thereby be avoided in an efficient and economical manner.
