PATENTANSPRÜCHE
1. Back-, Brat- und Grillofen, gekennzeichnet durch die Kombination folgender Elemente: - Fest eingebaute Bedienungs- und Überwachungsorgane (6, 7); - ein über einer Ofentür (5) liegendes, ausziehbares Filter (16); - ein über einem Back- und Grillraum (14) angeordnetes Gebläse (19), dessen Druckseite in einen Abzug (21) mündet, wobei dieser nach dem Gebläse (19) als Ejektor ausgebildet ist; - ein unter der Ofentür angeordneter Durchgang (30) für das Einströmen von Aussenluft zumindest in den Back- und Grillraum (14).
2. Ofen nach Anspruch 1, dadurch gekennzeichnet, dass die Saugseite des Gebläses (19) mindestens mit demBack-und Grillraum (14) sowie mit einem Raum der Bedienungs- und Überwachungsorgane (6, 7) verbunden ist.
3. Ofen nach Anspruch 1, gekennzeichnet durch eine mindestens doppelwandige Türe (5) und mindestens einen zwischen den Wänden liegenden Kühlkanal (46).
4. Ofen nach Anspruch 3, dadurch gekennzeichnet, dass der Durchgang (30) zusätzlich in den Kühlkanal (46) mündet.
5. Ofen nach Anspruch 2, dadurch gekennzeichnet, dass der Back- und Grillraum (14) direkt mit der Saugseite des Gebläses (19) und indirekt über einen, z. 13. mit einem weiteren Filter (17) ausgerüsteten Ejektorkanal (33) mit dem Gebläse verbunden ist.
6. Verfahren zum Betreiben des Back-, Brat- und Grillofens nach Anspruch 1, dadurch gekennzeichnet, dass man für den Grillbetrieb oder den Backofenbetrieb - das Gebläse unter Vollast oder unter Teillast antreibt; - die Ofentür offen oder geschlossen hält; - das ausziehbare Filter voll, bzw. teilweise auszieht oder nicht auszieht; - den Stau- und Einbauraum entlüftet; - den Bedienungs- und Überwachungsraum entlüftet.
7. Verfahren nach Anspruch 6, dadurch gekennzeichnet, dass man für den Backofenbetrieb - die Ofentür geschlossen hält; - das ausziehbare Filter nicht auszieht.
8. Verfahren nach Anspruch 6oder7, dadurch gekennzeichnet, dass man den Back- und Grillraum direkt über das Gebläse und zusätzlich über den Ejektor entlüftet.
9. Verfahren nach Anspruch 6, dadurch gekennzeichnet, dass man zum Entlüften des den Ofen enthaltenden Raumes - das Gebläse antreibt;.
- das ausziehbare Filter bei geschlossener Ofentür mindestens teilweise auszieht.
10. Verfahren nach Anspruch 6, dadurch gekennzeichnet, dass man im Betrieb des Ofens längs den Aussenwandflächen des Ofens Luft absaugt.
Die vorliegende Erfindung betrifft einen Back-, Brat- und Grillofen sowie ein Verfahren zu dessen Betrieb.
Die Back-, Brat- und Grillofenbauarten werden zusehends verfeinert, wobei das Hauptanliegen, welches stets an erster Stelle bleiben wird, das bestmögliche Zubereiten der Speisen ist.
Es spielt aber auch die Frage der Wegschaffung der dabei entstehenden Gase und Dämpfe sowie der verflüchtigten Geruchstoffe eine wesentliche Rolle. Back- und Grillofen neuerer Bauart weisen zu diesem Zwecke oberhalb der Beschickungs öffnung Bedienungsorgane auf sowie eine Abzugseinrichtungfür die im Betrieb auftretenden Dämpfe, wobei die Bedienungsorgane an der Stirnseite eines ausziehbaren und einschiebbaren, schubladenartigen Kastens zusammengefasst sind, in dessen Boden die Eintrittsöffnung der Abzugseinrichtung ausgebildet ist (CH-PS 472636). Bei dieser Konstruktion ist unmittelbar über dem Back- und Grillraum ein Abzugsgebläse vorgesehen, das der Wegführung dieser Gase und Dämpfe aus dem Ofenraum dient sowie, gegebenenfalls, eine Belüftung der Bedienungsseite des Ofens.
Andere derartige Back-, Brat- und Grillofen haben das Abzugsgebläse über dem im übrigen stark isolierten Back-, Bratund Grillraum entlüftet und andererseits die Aussenwände des Ofens kühlt. Diese bekannten Brat-, Back- und Grillöfen sind für die einzelnen Betriebsarten zu wenig differenziert eingerichtet.
Daher bietet sich als vorliegende Aufgabe die Schaffung eines derartigen Ofens an, der optimale Betriebsweisen und entsprechende Bauart für den ausschliesslichen Grillbetrieb und den ausschliesslichenBrat- oderBackbetriebgestattet. und welcher Ofen gleichzeitig dazu dient, als Entlüfter für den Stauraum des Ofens zu dienen.
In diesem Sinne zeichnet sich der erfindungsgemässe Back-, Brat- und Grillofen durch den kennzeichnenden Teil des Anspruches 1 aus, während ein derartiger Ofen erfindungsgemäss nach dem Verfahrensanspruch 6 betreibbar ist.
Die Erfindung wird anschliessend anhand eines in der Zeichnung dargestellten Ausführungsbeispiels erläutert.

Der in Fig. 1 dargestellte Back-, Brat- und Grillofen 1 ist mit einer oberen Abdeckung 2 sowie einer Vorderwand 3 mit Tür 5 versehen. Über der Tür 5 befindet sich ein Bedienungs- und Überwachungstablean 6, wobei die entsprechenden Instrumente und Schalter fest in der Vorderwand 3 eingebaut sind. Unter diesem Instrumentenraum befindet sich unmittelbar über der Tür5 eine Schublade 9, deren vorderer Teil mit einem Filter 16 ausgerüstet ist. Der Ofen steht auf einem Boden 11 bzw. einem Sockel. Seine der Tür 5 gegenüberliegende Wand ist als Rückwand 12 bezeichnet.
Im Innern des Ofens ist ein Brat-, Back- und Grillraum 14 in seiner vereinfachten Weise dargestellt, wobei in dessen hinterem Teil ein Abzug, mit einem Filter 17 bestückt, vom Raum 14 in den Ofenabzug 21 führt. Über der Schublade 9 ist ein Gebläse 19 angeordnet, welches in den Abzug 21 fördert.
Dieser Abzug 21 ist mit einem Trennblech 22 versehen, das in diesem Teil den Abzug 21 in zwei voneinander getrennte, aber nach dem Blech zusammenmündende Kanäle 32,33 unterteilt.
Ein Hauptkanal 32 führt direkt vom Gebläse 19 in denAbzug21, während ein Nebenkanal 33 den Raum 14 mit diesem Abzug 21 verbindet. Entsprechende Luftpfeile24, 25,26,27,28 und 29 zeigen die Luftströmung an, welche beim entsprechenden Betrieb, d. h. entsprechender Schaltung des Ofens, erreicht wird.
Es ist insbesondere auch aus Fig. 3 ersichtlich, dass unten an der Tür 5 ein Türspalt 30 in Form eines Luftdurchganges vorgesehen ist, welcher einerseits einen Stau- und Einbauraum 31 und andererseits in einen Luftkanal 46 mündet (Luftpfeil 36). Unter der Tür 5 befindet sich eine Schublade 40, wie dies bei Öfen dieser Bauart bekannt ist. Die in Fig. 3 dargestellte Ofentür 5 besteht aus mehreren, hier drei, Türwandschichten 42,43,44,
welche im Abstand voneinander angeordnet sind und entsprechende Kanäle festlegen, wobei in der Ausführung gemäss Fig. 3 einer der Kanäle 46 oben und unten offen ist, um ein Durchstreichen von Frischluft zu ermöglichen.
Der Stau- und Einbauraum ist durch die Seitenwände des Einbaumöbels und die Ofenseitenflächen begrenzt. Das rein schematisch eingezeichnete Gebläse 19 kann ein Ventilator irgend einer Bauart sein, insbesondere aber ein Radialgebläse oder ein Querstromgebläse, wie diese in solchen Öfen bekannt geworden sind.
Fig. 3 zeigt einen Ausschnitt aus Fig. 2, d. h. der Schaltung des Ofens in reinen Brat- und Backbetrieb. Bei dieser Schaltung ist der Brat- und Backraum 14 geschlossen, ebenso die über der Tür 5 liegende Schublade 9 mit dem Filter 16. Das Gebläse 19 arbeitet mit reduziertem Antrieb, beispielsweise mit 50 % Leistung. Es saugt dabei durch den Spalt 41, zwischen Tür 5 und Schublade 40, Raumluft an, welche durch den Luftkanal 46 in der Tür 5 nach oben gesaugt wird, wo sie durch das Filter 16 in die Schublade 9 und anschliessend auf der Saugseite in das Gebläse 19 gelangt.
Diese Luft wird anschliessend in den Hauptkanal 32 ausgestossen und verlässt den Abzug 21 nach oben. Diese Türkühlung bewirkt eine Türaussentemperatur von z. B. 60"C anstatt 120 C.
Gleichzeitig gelangt ein Teil der Luft im Spalt 41 in den Stauund Einbauraum 31, von wo sie durch Seitenöffnungen der Verkleidung in die Saugseite des Gebläses 19 gelangt. Es sind weiterhin mit den Pfeilen 24 und 26 Luftströmungen um den Brat- und Grillöfen dargestellt, die sowohl im Back- oder Bratbetrieb gemäss den Fig. 2,3 und 4, als auch im reinen Grillbetrieb gemäss den Fig. 1,5 und 6 arbeiten, nicht dagegen im reinen Lüftungsbetrieb gemäss Fig. 7.
In Fig. 4 ist die Schaltung des Ofens grundsätzlich gleich wie in Fig. 3. Es wird jedoch das Gebläse 19 voll belastet, eine Betriebsart, die von dem zu backenden bzw. bratenden Gut im Raum 14 abhängt.
Für diesen reinen Back- oder Bratofenbetrieb gemäss den Fig. 2,3 und4 kann mithin das Gebläse 19 voll (Fig. 4) oder wesentlich reduziert, z. 13.50% (Fig. 3) angetrieben werden. Die Ofentür 5 bleibt geschlossen. Die Schublade 9 mit dem Filter 16 bleibt ebenfalls geschlossen. Der Stau- und Einbauraum des Ofens wird entlüftet, ebenso der Bedienungs- und Überwachungsraum mit den Bedienungs- und Überwachungsinstrumenten.
Beim reinen Grillbetrieb gemäss den Fig. 1,5 und 6 sind wiederum zwei unterschiedliche Schaltungen vorgesehen. Bei der einen, nach Fig. 5, ist die Ofentür 5 geschlossen, während das Gebläse wesentlich reduziert, z. B. mit 50 9/c Leistung, angetrie- ben wird. Die Schublade 9 mit dem Filter 16 ist ebenfalls geschlossen, während der Stau- und Einbauraum entlüftet werden, ebenso der Bedienungs- und Überwachungsraum. Der Ofenraum 14 ist direkt über das Gebläse 19 und zusätzlich indirekt über einen Ejektorkanal, als Nebenkanal 33 bezeichnet, entlüftet.
Die Schaltung gemäss Fig. 6, die insbesondere für starke Gerüche und Dämpfe ergebende Grillierware vorteilhaft ist, arbeitet mit offener Tür 5. Die Schublade 9 mit dem Filter 16 ist mindestens teilweise, in Fig. 6 ganz, ausgezogen. Der Stau- und Einbaurum sind wiederum entlüftet, ebenso der Bedienungsund Überwachungsraum. Der Ofenraum ist, wie bei Fig. 5, mit dem Gebläse 19 direkt, bzw. indirekt, verbunden.
Bei dieser Schaltung mit vollaufendem Gebläse wird der Luftdurchsatz durch den Ofen gesteigert, wobei sich entsprechende Mengen Raumluft mit dem aus dem Raum 14 über den Kanal mit der offenen Tür entweichenden Gas- und Dampfstrom mischen und somit eine, wenn auch geringe, zusätzliche Raumbelüftung zur Absaugung unangenehmer Gerüche bewirken.
In Fig. 7 ist die Schaltung des Back-, Brat- und Grillofens 1 gezeigt, wie man sie zum Entlüften des den Ofen enthaltenden Raumes benützt. Der Ofen selbst ist, ausser dem Gebläse 19, ausser Betrieb und die Tür 5 geschlossen. Das Gebläse 19 ist in Betrieb gesetzt und mit voller oder Teillast angetrieben, die Saugseite zum Ventilator, d. h. die Schublade 9, ist mindestens teilweise ausgezogen, so dass den Ofen umgebende Raumluft als einziges Fördergut des Gebläses 19 durch das Filter 16 in die Saugseite des Gebläses 19 einströmt, worauf diese Raumluft durch den Abzug 21 ausgestossen wird.
Ein Back-, Brat- und Grillofen mit einem derartigen Aufbau kann jeweils nicht nur entsprechend der vorgesehenen Behandlungsweise des Gutes beim Backen, Braten und Grillieren spezifisch eingestellt werden, sondern ergibt zusätzlich die Möglichkeit, der Menge und der Art der entstehenden Dämpfe und Geruchstoffe Rechnung zu tragen sowie ohne Einbau eines weiteren Raumentlüftungsgebläses den Umgebungsraum mit Hilfe des Ofengebläses zu belüften.

PATENT CLAIMS

4. Oven according to claim 3, characterized in that the passage (30) additionally opens into the cooling channel (46).
5. Oven according to claim 2, characterized in that the baking and grill room (14) directly with the suction side of the fan (19) and indirectly via a, for. 13. with another filter (17) equipped ejector channel (33) is connected to the blower.
6. A method of operating the baking, roasting and grilling oven according to claim 1, characterized in that one drives the blower under full load or under partial load for the grill operation or the oven operation; - keep the oven door open or closed; - the pull-out filter fully or partially pulls out or does not pull out; - vented the storage and installation space; - the operating and monitoring room is vented.
7. The method according to claim 6, characterized in that for oven operation - the oven door is kept closed; - the pull-out filter does not pull out.
8. The method according to claim 6 or 7, characterized in that the baking and grill room is vented directly via the blower and additionally via the ejector.
9. The method according to claim 6, characterized in that - for venting the space containing the oven - drives the fan ;.

The present invention relates to a baking, roasting and grilling oven and a method for its operation.
The types of baking, roasting and grilling are constantly being refined, whereby the main concern, which will always remain in the first place, is the best possible preparation of the dishes.
However, the question of the removal of the gases and vapors produced as well as the volatilized odorous substances also plays an important role. For this purpose, the baking and grill ovens of the more recent design have operating elements above the loading opening and a discharge device for the vapors occurring during operation, the operating elements being combined on the front side of an extendable and insertable, drawer-like box, in the bottom of which the inlet opening of the extraction device is formed (CH-PS 472636). In this construction, an extractor fan is provided directly above the baking and grilling space, which serves to guide these gases and vapors away from the oven space and, if necessary, ventilation of the operating side of the oven.
Other baking, roasting and grilling ovens of this type have vented the extractor fan above the otherwise highly insulated baking, roasting and grilling room and, on the other hand, have cooled the outer walls of the oven. These known roasting, baking and grilling ovens are not sufficiently differentiated for the individual operating modes.
Therefore, the present task offers the creation of such an oven, which allows optimal operating modes and corresponding design for the exclusive grill operation and the exclusive roasting or baking operation. and which stove also serves as a vent for the storage space of the stove.
In this sense, the baking, roasting and grilling oven according to the invention is characterized by the characterizing part of claim 1, while such an oven can be operated according to the method claim 6 according to the invention.
The invention is subsequently explained using an exemplary embodiment shown in the drawing.

The baking, roasting and grilling oven 1 shown in Fig. 1 is provided with an upper cover 2 and a front wall 3 with door 5. An operating and monitoring table 6 is located above the door 5, the corresponding instruments and switches being permanently installed in the front wall 3. A drawer 9, the front part of which is equipped with a filter 16, is located directly below the door 5 under this instrument compartment. The furnace is on a floor 11 or a base. Its wall opposite the door 5 is referred to as the rear wall 12.
In the interior of the oven, a roasting, baking and grilling room 14 is shown in its simplified manner, with an extractor equipped with a filter 17 leading from the room 14 into the oven extractor 21 in the rear part thereof. A blower 19 is arranged above the drawer 9 and feeds into the trigger 21.
This fume cupboard 21 is provided with a separating plate 22 which in this part divides the fume cupboard 21 into two channels 32, 33 which are separate from one another but merge after the plate.
A main duct 32 leads directly from the fan 19 into the fume cupboard 21, while a secondary duct 33 connects the space 14 with this fume cupboard 21. Corresponding air arrows 24, 25, 26, 27, 28 and 29 indicate the air flow, which during the corresponding operation, i. H. appropriate switching of the furnace is achieved.
It can also be seen in particular from FIG. 3 that a door gap 30 in the form of an air passage is provided at the bottom of the door 5, which on the one hand opens into a stowage and installation space 31 and on the other hand into an air duct 46 (air arrow 36). Under the door 5 there is a drawer 40, as is known in ovens of this type. The oven door 5 shown in FIG. 3 consists of several, here three, door wall layers 42, 43, 44,
which are arranged at a distance from one another and define corresponding channels, one of the channels 46 being open at the top and bottom in the embodiment according to FIG. 3 in order to allow fresh air to be passed through.
The storage and installation space is limited by the side walls of the built-in furniture and the side surfaces of the oven. The purely schematically drawn fan 19 can be a fan of any type, but in particular a radial fan or a cross-flow fan, as has become known in such furnaces.
Fig. 3 shows a section of Fig. 2, i.e. H. switching the oven to pure roasting and baking operation. In this circuit, the roasting and baking chamber 14 is closed, as is the drawer 9 with the filter 16 located above the door 5. The fan 19 operates with a reduced drive, for example with 50% output. It sucks in through the gap 41, between the door 5 and the drawer 40, room air, which is sucked up through the air duct 46 in the door 5, where it passes through the filter 16 into the drawer 9 and then on the suction side into the blower 19 arrives.
This air is then expelled into the main channel 32 and leaves the trigger 21 upwards. This door cooling causes an outside temperature of z. B. 60 "C instead of 120 C.
At the same time, part of the air in the gap 41 reaches the stowage and installation space 31, from where it reaches the suction side of the blower 19 through side openings in the cladding. The arrows 24 and 26 also show air flows around the roasting and grilling ovens, which operate both in the baking or roasting mode according to FIGS. 2, 3 and 4 and in the pure grilling mode according to FIGS. 1.5 and 6 , but not in pure ventilation mode according to FIG. 7.
In Fig. 4, the switching of the oven is basically the same as in Fig. 3. However, the blower 19 is fully loaded, an operating mode that depends on the goods to be baked or roasted in the room 14.
For this pure baking or roasting oven operation according to FIGS. 2, 3 and 4, the blower 19 can therefore be fully (FIG. 4) or significantly reduced, e.g. 13.50% (Fig. 3) are driven. The oven door 5 remains closed. The drawer 9 with the filter 16 also remains closed. The stowage and installation space of the furnace is vented, as is the operating and monitoring room with the operating and monitoring instruments.
In the pure grill mode according to FIGS. 1.5 and 6, two different circuits are again provided. In one, according to FIG. 5, the oven door 5 is closed, while the fan is considerably reduced, e.g. B. with 50 9 / c power is driven. The drawer 9 with the filter 16 is also closed, while the storage and installation space is vented, as is the operating and monitoring room. The furnace chamber 14 is vented directly via the fan 19 and additionally indirectly via an ejector channel, referred to as a secondary channel 33.
The circuit according to FIG. 6, which is particularly advantageous for grilled goods resulting from strong odors and vapors, works with the door 5 open. The drawer 9 with the filter 16 is at least partially extended, in FIG. 6 entirely. The storage and installation space are in turn vented, as is the operating and monitoring room. 5, is directly or indirectly connected to the blower 19.
In this circuit with a full fan, the air throughput through the stove is increased, with corresponding amounts of room air mixing with the gas and steam flow escaping from room 14 via the duct with the open door and thus, albeit slight, additional room ventilation for extraction cause unpleasant smells.
In Fig. 7, the circuit of the baking, roasting and grilling oven 1 is shown how it is used to vent the space containing the oven. The furnace itself, apart from the blower 19, is out of operation and the door 5 is closed. The fan 19 is started and driven at full or partial load, the suction side to the fan, i. H. the drawer 9 is at least partially pulled out, so that the room air surrounding the furnace, as the only material conveyed by the blower 19, flows through the filter 16 into the suction side of the blower 19, whereupon this room air is expelled through the extractor 21.
A baking, roasting and grilling oven with such a structure can not only be set specifically in accordance with the intended treatment of the goods when baking, roasting and grilling, but also gives the possibility of taking into account the amount and type of vapors and odorous substances produced wear and ventilate the surrounding space with the help of the stove fan without installing another room ventilation fan.
