 Procédé de fabrication d'un produit lacté L'objet de la    présente      invention   est un    procédé   de fabrication d'un produit lacté. Ce procédé est caractérisé par le fait que l'on    coule   du    lait,   rendu sirupeux, dans un moule où il forme une    couche   continue, le soumet à une    dessiccation      complète   de façon à lui donner la forme d'une plaque solide, puis débite    celle-ci   en vue    d'obtenir   des    pièces   mangeables à la main. 



  La description ci-dessous    concerne   un exemple de mise en    #uvre   dudit    procédé   et le dessin qui y est annexé montre un exemple du produit obtenu par cette mise en    aeuvre.   



  Celle-ci consiste à    partir   de lait, frais, liquide et, de préférence, légèrement sucré ; on le soumet à une première    dessication   de façon à lui donner la consistance d'un sirop, puis on le. coule dans    un,   moule où il forme une couche d'épaisseur    uniforme   et on le soumet alors à une seconde    dessiccation   complète sous vide en le chauffant à une température de 50 à 600. On obtient ainsi une plaque    solide   d'épaisseur plus grande que la couche    sirupeuse      primitive   et d'aspect spongieux ou poreux.    Cette   plaque est alors débitée en    pièces   solides ayant les    dimensions   de biscuits.

   La figure reproduit en perspective l'un de    ceux-      ci,   de    forme   rectangulaire. La matière en est dure et    son.   aspect est    spongieux   ou poreux.

  This consists of milk, fresh, liquid and, preferably, slightly sweet; it is subjected to a first desication so as to give it the consistency of a syrup, then it is. flows into a mold where it forms a layer of uniform thickness and is then subjected to a second complete drying under vacuum by heating it to a temperature of 50 to 600. This gives a solid plate of thickness greater than the primitive syrupy layer with a spongy or porous appearance. This plate is then cut into solid pieces having the dimensions of biscuits.
