Verfahren und Einrichtung, um Fleischlagerräume mit vollautomatischer Kühlanlage auf konstanter Temperatur und Feuchtigkeit zu halten. Bei bekannten Kühleinrichtungen von Fleischlagerräumen ist die durch den Kühler und den Raum zirkulierende Luftmenge mehr oder weniger konstant. Die Unterkühlung der Luft lässt sich daher bei gegebener und kon stanter Verdampfungstemperatur nicht beein flussen. Dementsprechend ist auch keine Mög lichkeit gegeben, die Trocknung der Luft nach Belieben und nach Erfordernis zu be einflussen. Man korrigiert diesen Nachteil bei den bekannten Kühleinrichtungen dadurch, dass man mehr oder weniger Luft pro Stunde im Raume umwälzt.
Da aber bei einem Raum von gegebener Grösse eine konstante und ganz bestimmte Luftmenge erforderlich ist, haben diese Einrichtungen den Nachteil, dass bei Drosselung der Luft die Luftumwälzung zu klein ist und daher die vom Fleisch abgege bene Feuchtigkeit nicht mehr abzuführen vermag.
Um einen möglichst niedrigen Feuchtig keitsgehalt der Luft zu erzielen, muss bei den bekannten Einrichtungen eine relativ grosse Verdampferleistung gewählt werden. Dies hat zur Folge, dass die Betriebszeit der Kälte maschine sehr kurz ausfällt. Die Stillstands zeiten sind daher so lang, dass während dieser Zeit infolge der stetigen Abgabe von Feuch tigkeit durch das Fleisch, die relative Feuch tigkeit der Luft steigt und damit das Fleisch gefährdet. Es bilden sich leicht nicht nur Schimmelpilze, sondern das Fleisch wird unter Umständen schmierig.
Die vorliegende Erfindung stellt sich nun die Aufgabe, die erwähnten Nachteile der ge nannten Einrichtungen zu beseitigen.
Das Verfahren nach der vorliegenden Er findung besteht darin, dass die Raumluft zum Teil gekühlt und zum Teil ohne Kühlung je in regelbarer Menge zwangsweise umgewälzt wird.
Die erfindungsgemässe Einrichtung zur Durchführung des Verfahrens besitzt einen Luftkühlkanal und einen neben diesem an geordneten Umlaufkanal, in welchem Luft- kühlkanal ein Teil der zwangsweise zirkulie renden Luftmenge mittels eines Kühlers ge kühlt werden kann, während der andere Teil vom Kühler unbeeinflusst durch den Umlauf kanal geführt werden kann, wobei zur Ver mischung dieser beiden Luftmengen eine ge meinsame Austrittsöffnung vorhanden ist.
Auf der Zeichnung ist ein Ausführungs beispiel der erfindungsgemässen Einrichtung dargestellt.
Fig. 1 und 2 zeigen einen kleineren und einen grösseren Fleischlagerraum, und Fig. 3 zeigt in grösserem Massstab einen Vertikalschnitt durch die erfindungsgemässe Einrichtung.
Die Kühlmaschine sowie ihre elektrische Ausrüstung und die dazugehörigen Teile sind als bekannt vorausgesetzt und daher der Ein fachheit halber weggelassen.
Dem gezeichneten Beispiel ist im Falle der Fig. 1 ein grosser Fleischlagerraum A und im Falle der Fig. 2 ein kleiner Fleischlagerraum B zugrunde gelegt. An der einen Stirnwand des Lagerraumes<I>A</I> bezw. <I>B</I> ist ein vertikales Luftumwälzoehäuse 1 angebaut, welches oben an der Seitenwand eine Lufteintrittsöffnung 2 und unten am Boden eine Luftaustrittsöff- nung 3 aufweist.
Vor der Lufteintrittsöffnung ist ein Ventilator 4 angeordnet, welcher die aus dem Raume A bezw. B angesaugte Luft durch die sich bei Beginn des Betriebes selbst tätig öffnende und am Schluss des Betriebes sich schliessende Abschluss-Jalousie 5 hin durch in das Innere des Gehäuses 1 drückt. Der mittlere Teil des Gehäuses ist durch eine Wand 6 in zwei nebeneinander angeordnete vertikale Kanäle, den Umlaufkanal 7 und den Kühlkanal 8 unterteilt, in welch letzterem ein von der Kühlmaschine betätigter als Küh ler wirkender Verdampfer 9 eingebaut ist.
Unten stehen Kanäle 7 und 8 durch eine ()ff- nung 10 miteinander in Verbindung. 11 ist eine von aussen einstellbare Klappe zur Regu lierung des Luftdurchganges durch den Um laufkanal und durch den Kühlkanal. Unter halb des Kühlelementes 9 ist eine Sammel schale 12 für das durch Auftauen des am Kühlelement vorhandenen Eises gebildete M'asse@ angeordnet, das durch eine nach aussen geführte Leitung 13 abfliessen kann.
Über der Schale 12 befindet sich ein elektrischer Abbau- heizkörper 14 und unter dem Gehäuse 1 hinter der Austrittsöffnung 3 ein elektrischer Raum heizkörper 15.
Im untern Teil des Kühlkanals 8 ist ein sogenannter Fühler 16 für den im Raum A bezw. B untergebrachten Thermostat 17 an geordnet.
Durch den Betrieb der beschriebenen Ein richtung wird das erfindungsgemässe Ver fahren beispielsweise wie folgt durchgeführt: Die Luft wird durch den Ventilator 4 vom Kühlraum angesaugt und nach unten zum Teil über das Kühlelement 9 durch den Luft kühlkanal 8 und zum Teil ohne Kühlung durch den Umlaufkanal 7 gedrückt. Durch Verstellen der Klappe 11, die von Hand oder durch einen Hygrostat selbsttätig verstellt werden kann, wird die Luftmenge durch den Luftkühler und durch den Umlaufkanal reguliert.
Am Mundstück 3 vereinigt sich die gekühlte Luft mit der ungekühlten Umluft und tritt. in senkrechter Riehtung gegen den Boden in den Kühlraum<I>A</I> bezw. <I>B</I> aus. Diese Luft wird im Winter durch den Raumheiz körper 15 erwärmt. Die Ein- und Ausschal- tun-- dieser Raumheizung kann von Hand oder ebenfalls durch einen Hygrostat, der evtl. auch die Klappe 11 bedient, erfolgen.
Zum Abtauen des Verdampfers 9 wird der unter demselben angeordnete Abtauheizkörper 14 automatisch durch einen Zeitschalter in Be trieb gesetzt. Ventilator und Kühlmaschine werden miteinander durch den Thermostat 17, der im Raume A bezw. B einmontiert ist. ein- und ausgeschaltet. Im Raum A kann die Luft durch den an der Decke angeordneten Kanal 18, dessen Boden (und evtl. die Seiten wände) viele Schlitze 19 aufweist, gleich mässig verteilt angesaugt werden.
Durch den Luftkühlkanal 8 wird durch entsprechendes Einstellen der Klappe 11 so viel Luft geführt, dass eine genügende Unter hiihlung, z. B. auf - 5 oder - 6 C erreicht wird. Die überschüssige Luft wird im Um- laufkanal 7 nicht gekühlt und vermischt sich unmittelbar vor der Austrittsöffnung 3 aus dem Gehäuse 1 mit der Kaltluft. Dadurch wird eine stärkere Trocknung der Gesamtluft erreicht, da diese für einen Raum von ge gebener Grösse mengenmässig einen ganz be stimmten Wert aufzuweisen hat.
Würde die für die Durchflutung des Raumes notwendige Luftmenge in ihrer Gesamtheit durch den Luftkühlkanal geführt, dann würde eine zu geringe Trocknung der Luft erreicht oder aber die Leistung des Kühlelementes 9 und der Maschine müsste viel zu gross bemessen sein. Je grösser aber die Leistung der Maschine und des Kühlelementes bei gleicher Raumgrösse angesetzt wird, umso kürzer werden die Lauf zeiten und um so länger die Stillstandszeiten.
Die relative Luftfeuchtigkeit im Raum kann im vorliegenden Fall zwischen zwei Werten, die 1-5 % auseinanderliegen, variieren, wäh rend die Toleranz bei bekannten Einrichtun gen zwischen 10-15 % liegt. Es ist bekannt, dass Lagerfleisch nur dann nicht an Qualität einbüsst, wenn die relative Feuchtigkeit auch während den Stillstandszeiten der Maschine, von der Temperatur abgesehen, keinen gro ssen Schwankungen unterliegt.
Der Fühler 16 des Thermostaten 17 ist so angeordnet, dass er der Kaltluft im Luftkühl kanal ausgesetzt wird. Während der Kühlung sinkt die Temperatur der Kaltluft zum Bei spiel auf - 5 C, währenddem sie während den Stillstandszeiten relativ schnell wieder auf - 2 C ansteigt. Man hat daher für den Thermostat eine Temperatur von 3-4 C zur Verfügung, so dass die Nachteile eines Raum thermostates mit 1 C Ansprechdifferenz voll beseitigt werden können.
Mit der Anord nung des Thermostates wie vorstehend er läutert, ist es möglich, eine Temperaturkon stanz im Raume zu erzielen, die höchstens 5/10o. C beträgt, zum- Unterschied von Thermostaten bei den bekannten Einrichtun gen, die eine Temperaturdifferenz im Raum von 1-2 C benötigen, um die Einschaltung der Maschine zu bewirken. Die Temperatur in solchen Räumen schwankt daher um etwa 1-2 C, was wiederum für die Lagerung von Fleisch auf lange Sicht unbedingt von Nach teil ist.
Beider beschriebenen Kühleinrichtung kann trotz erforderlicher konstanter Luftumwälzung im Raum die Unterkühlung eines gewissen Teils der Luft so weit getrieben werden, dass eine starke Trocknung der Mischluft erreicht wird. Die beschriebene Einrichtung schafft die Möglichkeit, die erwähnten Nachteile der Eingangs angeführten bekannten, Kühlein- richtungen zu beheben, indem durch Reduzie rung der durch den Luftkühler geführten Luftmenge die Unterkühlung der Luft zum Beispiel von +1 C und 85 % relativer Feuch tigkeit bis auf - 5 bis - 6 C getrieben wer den kann.
Bei dieser Unterkühlung wird pro Qubikmeter Luft ungefähr 1,3 g Wasser aus geschieden. Dies entspricht bei einer stünd lichen Luftmenge von 1000 m3, die durch den Kühler geführt wird, einer Wasserausschei dung von 1,3 kg pro Stunde. Die pro Kubik meter nur noch 3,10 g Wasserdampf ent haltende Luft mischt sich mit der ungekühlten Luft, zum Beispiel ebenfalls 1000 m3 von +I' <B>C</B> und 8595' relativer Feuchtigkeit und einem absoluten Wasserdampfgehalt von etwa 4,
4 g pro Qubikmeter. Aus dem Kühler treten daher 2000 m3 mit einem totalen Wasser dampfgehalt von 7,5 kg. Die Gesamtluft wird daher mit einer Temperatur von ungefähr -2,5 C in den Fleischlagerraum eintreten. Diese Luft erwärmt sich dann dort beim Durchstreichen von unten nach oben auf 0 bis -I-1 C, so dass sie, wenn vom Fleisch keine Feuchtigkeit abgegeben würde, eine relative Feuchtigkeit von etwa 75 % auf weisen würde.
Da beim Durchstreichen des Fleischlager raumes die Luft vom Fleisch Feuchtigkeit aufnimmt, erhöht sich ihre relative Feuchtig keit vor dem Ansaugen durch den Ventilator auf 80-8575. Demgegenüber würde sich die <B>85%</B> relative Feuchtigkeit aufweisende Luft bei den bekannten Kühleinrichtungen, bei denen die gesamte Luft durch den Luftkühler geführt wird - vorausgesetzt, dass die Ver- dampf erleistunggleich g rossbemessen Würde nur auf etwa -18 C abkühlen.
Die Luft würde sich also bei der Wiedererwärmung auf 1 C und eine relative Feuchtigkeit von etwa 81 % verändern, also ungefähr 6 % höher als bei der beschriebenen Einrichtung.
Die beschriebene Einrichtung ermöglicht verschieden starke U nterkühliuig der Luft und daher verschiedene Feuchtigheilsgrade im Raume zu erzwingen. Durch Verstellen der Klappe 11 kann wahlweise nach Bedarf mehr Luft durch den Kühlkanal oder durch den Umlaufkanal geleitet werden. Ausserdem können mit relativ geringer Leistung des Luftkühlers und damit auch der Kälte maschine klimatische Verhältnisse, das heisst Temperatur und Feuchtigkeit, im Raume er zielt werden, die mit den bekannten Kühlein richtungen erst bei fast doppelter Verdamp- ferleistung erzielbar sind.
Wegen der Bedin gung nach Konstanz der Feuchtigkeit und der Temperatur spielt dies eine grosse Rolle, wenn die Verdampferleistung und die Kühlmaschi- nenleistung möglichst klein gewählt werden kann; dies ist bei der beschriebenen Einrich tung möglich, da nur ein Teil, ungeführ 40 bis 70 % der Luftmenge gekühlt, der übrige Teil im Raume einfach ohne Kühlung umgewälzt wird.
Ein weiterer Vorteil, den die beschriebene Kühleinrichtung aufweist, besteht darin, dass infolge des unter dem Kühlelement eingebau ten Abtauheizkörpers 14 in kürzester Zeit einmal pro Tag die Abtauung des Kühl elementes ohne Beeinflussung der Raumtem peratur stattfinden kann, und ohne dass die sich bildende feuchte Luft in den Raum ein treten kann, wie dies besonders bei Decken kühlern mit natürlicher Luftumwälzung der Fall ist. Bei den letztgenannten Kühleinrich tungen mit Deckenkühlern und natürlicher Luftumwälzung tritt die feuchte Luft beim Abtauen oben in den Kühlraum ein und lässt die Raumluft auf 95-100 % relative Feuch tigkeit ansteigen.
Ferner hat die beschriebene Kühleinrich tung den Vorteil, dass unmittelbar beim Aus tritt der Luft aus dem Gehäuse 1 eine Raum heizvorriehtung (15) in Betrieb gesetzt wer den kann, mittels welcher evtl. zu stark unterkühlte Luft. erwärmt. und daher ge trocknet wird.
Diese Raumheizungsvorrich- tung, die den in der kalten Jahreszeit fehlen den Wärmeeinfall durch die Kühlraumisolie- rung ersetzt und bei jedem richtigen Fleisch lagerraum vorhanden sein muss, ermöglicht, die Laufzeit der Maschine im Winter unge fähr auf gleicher Höhe zu halten wie während den Sommermonaten. Wenn diese Raumheiz- vorrichtung mittels Hygrostat gesteuert wird, so dass sie bei steigender relativer Feuchtig keit ein-, bei sinkender relativer Feuchtigkeit ausgeschaltet wird,
findet die Wärmeabgabe dieses Heizelementes unabhängig auch wäh rend den Stillstandszeiten der Maschine statt. Diese Wärme gelangt aber nicht wie bei den üblichen Einrichtungen zum Verdampfer element, sondern sie wird auch während den Stillstandszeiten der Maschine. da eine redu zierte Luftmenge durch natürlichen Umlauf am vereisten Kühlelement sich weiter unter kühlt, von dem durch das Kühlelement ge kühlten Luftstrom mitgenommen und in den Raum geführt.
Übrigens ist. dieses Heizelement bei der üblichen Einrichtung mit Deckenkühlelement und natürlicher Luftzirkulation so im Raume angeordnet, dass die Luft zuerst durch das an der Decke neben dem Verdampfer angebrachte Heizelement streicht und nachher zum Ver dampfer (Kühler) geleitet wird. Dadurch ist der Trocknungseffekt bei einer derartigen An lage so verringert, dass trotz der Raumheizung eine zu feuchte Atmosphäre im Lagerraum herrscht.
Zusamrnengefasst ermöglicht die beschrie bene Kühleinrichtung gegenüber bekannten Kühleinrichtungen: a) die klimatischen Bedingungen im Fleischlagerraum so zu regulieren, dass das Fleisch wochenlang bei 0 C, ohne an Qualität einzubüssen, gelagert werden kann; I>) die Leistung der Kühlmaschine und des Kühlelementes kleiner als üblich zu bemessen; e) die Abtauung des Kühlelementes pro Tag innert ungefähr 2 Stunden durchzufüh ren; d) mit verhältnismässig kleiner Leistung der Raumheizung die Betriebszeit der Ma schine pro 24 Stunden so auszudehnen, dass ein Abtauen des Verdampfers zwischen jeder Stillstandsperiode ausgeschlossen ist;
e) die Abtauung des Kühlelementes vor zunehmen, ohne dass die sich am abtauenden Kühlelement (Verdampfer) bildende feuchte Luft in den Kühlraum gelangen kann; f) dass die Luft zuerst gekühlt und nach her erwärmt wird, wodurch der Trocknungs- effekt auf ein Maximum gebracht wird.

The present invention now has the task of eliminating the disadvantages of the mentioned devices.
The method according to the present invention consists in the fact that the room air is partly cooled and partly forcibly circulated in a controllable amount without cooling.
The device according to the invention for carrying out the method has an air cooling channel and a circulation channel arranged next to it, in which air cooling channel part of the forcibly circulating air volume can be cooled by means of a cooler, while the other part is guided through the circulation channel unaffected by the cooler can be, whereby a common outlet opening is available for mixing these two amounts of air.

If the total amount of air required for flooding the room were to be passed through the air cooling duct, the air would be dried too little or the output of the cooling element 9 and the machine would have to be much too large. However, the greater the performance of the machine and the cooling element with the same room size, the shorter the running times and the longer the downtimes.
In the present case, the relative humidity in the room can vary between two values that are 1-5% apart, while the tolerance in known facilities is between 10-15%. It is known that stored meat does not lose its quality if the relative humidity, apart from the temperature, is not subject to major fluctuations even when the machine is idle.
The sensor 16 of the thermostat 17 is arranged so that it is exposed to the cold air in the air cooling channel. During cooling, the temperature of the cold air drops to -5 C, for example, while it rises relatively quickly to -2 C during downtimes. You therefore have a temperature of 3-4 C available for the thermostat, so that the disadvantages of a room thermostat with a response difference of 1 C can be completely eliminated.
With the arrangement of the thermostat as he explained above, it is possible to achieve a temperature constant in the room that is at most 5 / 10o. C is, in contrast to thermostats in the known Einrichtun conditions that require a temperature difference in the room of 1-2 C to cause the machine to switch on. The temperature in such rooms therefore fluctuates by around 1-2 C, which in turn is essential for the storage of meat in the long term.

The device described enables different degrees of U nterkühliuig the air and therefore different degrees of moisture in the room to be enforced. By adjusting the flap 11, more air can optionally be passed through the cooling duct or through the circulation duct as required. In addition, with a relatively low power of the air cooler and thus also of the refrigeration machine, climatic conditions, that is to say temperature and humidity, in the room can be achieved which can only be achieved with the known Kühlein devices with almost double the evaporator power.
Due to the requirement for constant humidity and temperature, this plays a major role if the evaporator output and the cooling machine output can be selected as small as possible; This is possible with the device described, since only part of the air volume, roughly 40 to 70%, is cooled, the remaining part is simply circulated in the room without cooling.
Another advantage of the cooling device described is that, as a result of the defrosting heater 14 installed under the cooling element, the cooling element can be defrosted once a day in a very short time without affecting the room temperature and without the moist air that forms can enter the room, as is particularly the case with ceiling coolers with natural air circulation.
