liaffeemaschine mit Kaffeebrüh- und lfochvorrichtung. Gegenstand der Erfindung ist eine Kaffeemaschine mit einer neuartigen Brüh und Kochvorrichtung, welche für Cafes, Ho tels und Gastwirtschaften bestimmt ist. Es sind bereits schon eine Reihe Kaffeemaschi nen für genannten Zweck auf dem Markt, die aber fast ausschliesslich nach dem Ex press-System arbeiten, ausgenommen die so genannten Uberbrühmaschinen; letztere kom men aber wegen ihrer Unwirtschaftlichkeit zum Vergleich nicht in Betracht.
Bei dem Express-System wird das Kaffee mahlgut in einem sogenannten Brühsiebhal- ter, bei welchem die Filterfläche der Kaffee mahlgutmenge angepasst sein muss, mit einer entsprechenden Brüharmatur dicht. verschlos sen und es wird ihm von einem unter Dampf druck stehenden Boiler wechselnd heisses Wasser und Dampf zugeführt, die durch das Kaffeemehl gepresst werden. Die dabei auf tretenden Temperaturen liegen weit über dem Siedepunkt und schwanken etwa zwischen 109 Grad und 118 Grad Celsius.
Bei Brühwassertemperaturen, die so weit über dem Siedepunkt des Wassers liegen, ist aber ein einwandfreies, klares und aroma tisches Kaffeegetränk nicht zu erreichen, weil dadurch dem Kaffeegut auch die in dem selben enthaltenden Bitterstoffe und Kolloide entzogen werden und das fertige Getränk trübe und bitter machen; das Brühgut wird überhitzt. Lässt man ein auf diese Weise hergestellten Kaffee einige Zeit stehen, so wird er unansehnlich grau, trübe und fast ungeniessbar.
Die vorstehende Erfindung arbeitet auf andere Weise und gestattet viele Neuerun-en gegenüber andern Systemen, wie nachstehende Beschreibung zeigt.

Das Brüharmaturgehäuse 1 ist mittelst Mutter 2 in bekannter Weise mit einem unter Dampfdruck stehenden Heisswassererzeuger 3 dicht verbunden. Am freien Ende des Ge häuses 1 ist der Kolben 4, mit einer durch Stift 8 gegen Verdrehen gesicherten Dich- tungss,cheibe <B>5,</B> durch Stopfbüchsenteile 10, 11, 1'2, 13, 14, 15i gelagert.
16 ist .der B.rüh- hebel, welcher mit .dem Schaft des Kolbens 4 fest verbunden ist. Die Feder 9 presst die Dichtungsscheibe 5 fest an die flache Aus- drehung des Gehäuses 1 an. Die Dichtungs scheibe 5 hat eine nach aussen offene Nute 6, und eine geschlossene Nute 7.
Durch Stift 17, welcher am Hebel 16 sitzt, wird der Winkel hub mittelst Anschläge 33 und 33' begrenzt, die Nasen 34 und 34' sind Rasten für die Zwischenstellungen des Hebels 16, be ziehungsweise des Stiftes 17.
Von der flachen Ausdrehung des Ge häuses 1 gehen sieben Bohrungen in axialer Richtung; die zentrisch: sitzende Bohrung 20 mündet in die radial nach oben gehende Boh rung 21, welche zum Brühgefäss führt; die Bohrung 18 mündet in die Auslaufbohrung 19; Loch 22 ist durchgehend und endet in den Dampfkrümmer 26, Bohrung 25 verbin det Bohrung 22 mit 23, beziehungsweise auch 23 :durch Krümmer 26 mit dem Dampfraum des Boilers 3; 22 und 23. sind also die Dampf kanäle. Bohrung 24 und 24' enden beide in das Entlüftungsrohr 28; Kanal 3.1 ist durch gehend wie Bohrung 22. und mündet in. den nach unten gehenden Wasserkrümmer 27; 31 ist also der Wasserkanal.
Die Bohrung 30 führt zum federnden Rohr 32 über Anschluss stutzen 47, Bohrung 46, und mündet in den Massraum ,des Glases 41.
Der mittelst Handgriff 6-0 herausnehm bare Siebhalter 35 wird zwischen den beiden Dichtungsringen 29 und 39 dicht verschlos sen;
die Anpressung erfolgt mittelst Hand rad 55, welches :durch die Schraube 5.8 mit dem Vierkant 56 der Gewindehülse 50 ver bunden ist, letztere ist drehbar im Auge 51 beziehungsweise an den Traversen 51 (Fig. 1, 2 und 7), welche durch Verbindungsstangen 52, 52', Muttern 53, 53' und Augen 57, 57' mit der Brüharmatur 1 fest verbunden sind. Der Gewindeschaft 49 bildet mit 43 ein Stück und ist mit Deckel 42 durch Dich tungsring 45 dicht, verschlossen.
Wird am Handraid 55 im Anpresssinn gedreht, so drückt das feststehende Gewinde 49 den Deckel 42 nach unten. Der Druck überträgt sich über Dichtungsring 3-8 auf Glas 41, Dichtungsring 37 und Fassung 36, weiter auf Dichtung 39, Siebhalter 3':5 und Dichtungs ring 2:9.
Mittelst Stab 44 und Mutter 63 wind das Massglas 41 gehalten, wenn der Siebhalter 35 herausgenommen ist. Die Filterscheibe, wel che aus Filterscheiben oder vorteilhaft aus feinstem Silberdrahtgewebe, bestehen kann, ist zwischen den beiden herausnehmbaren Sieben 6,1 und 6@2 beziehungsweise 61' und 62' eingespannt, und zwar zwischen Mutter 64 beziehungsweise 64' und Schraubenkopf 65 beziehungsweise 65'. Das untere Siebpaar 61, 62 ist mit Gewindeschaft 66 und Hülse 67 verschraubt und gegen Herausfallen ge sichert Hülse 67 ist mittelst Steg 68 mit Siebhalter 35 fest verbunden.
Das obere Sieb paar 6'11', 6!2' wird durch Schraube 65' am un tern Ende des Schaftes 44 festgehalten. Der kegelförmige Hohlkörper 40, welcher mit Ringteil 36 verbunden ist, hat Durchbrechun- gen 70 und 70'.
Die Arbeitsweise ist folgende: Der Siebhalter 35 wird herausgenommen und es. werden Filterscheiben zwischen die Siebpaare 61, 62 und 61', 62' gelegt, und letztere werden wieder eingesetzt. Das Kaffee- mahlgut, und zwar fein gemahlen, kommt in den Siebhalter 35, welcher dann auf den Dichtungsring 2;9 gesetzt, mittelst Drehen am Handrad 55 eingespannt und abgedichtet wird. Das Kaffeegut im Siebhalter 35 ent spricht beispielsweise 1/s Liter fertigen Kaffees.
An den Verbindungsstäben 52. 52' sind verstellbare Zeiger 71, 71', 71" (Fig. 7) angebracht, welche nach dem Inhalt :der zu verwendenden Kaffeetassen und -Kannen an gestellt werden. An Stelle dieser Zeiger 71 kann auch eine Inhaltsskala auftreten.
Der Brühhebel 16 steht in Ruhestellung bei A Fig. 3, der Stift 17 liegt also auf An schlag 3$. Nun dreht man den Hebel 16 nach links bis der Stift 17 am Anschlag 3-3'' auf liegt, Stellung B Fig. 4. Der Wasserkanal 31 ist jetzt durch Nute 7 mit Bohrung 20 und 21 verbünden.
Das unter Dampfdruck stehende heisse Wasser im Boiler 3. strömt durch Krümmer 27, Kanal 31 über Nute 7, Bohrung 20, 21 durch Steg 68, Siebpaar 61, 62 zum Kaffeemahlgut, welches bis ins klein ste Teilchen vom Brühwasser umspült wird, weil das Wasser von unten kommt, und wei ter durch das zweite Siebpaar 61', 62' in das Hessglas 41.
Die Temperatur des Wassers im Boiler 3 liegt über dem Siedepunkt, da es nun frei in. den Messraum einströmen kann, also nicht mehr unter Druck steht, gibt es. Wärme in Form von Dampf ab, welcher durch die Bohrung 46 über Rohr 32, Bohrung 30, offene Nute 6, - Kanal 24 zum Entlüftungsrohr 28 ins Freie ent weicht, Fig. 2, 4. Ein Überhitzen des Kaffeegutes kann nicht vorkommen, weil die Temperatur des Brühwassers während des Brühprozesses nicht über den Siedepunkt steigt.
Hat das Kaffeewasser im Messglas 41 den Zeiger 1/2 Liter erreicht, wirrt der Hebel 1,6 auf Raste 34' gestellt, Fig. 5. In :dieser Stellung ist der Wasserkanal 31 verschlossen, der Dampfkanal 28 durch Nute 7 mit Boh rung 20, 21 und mit dem Messglas 41 ver blinden.
Der Dampf kocht nun eine halbe ?Minute das Kaffeegut auf und hält das Brüll- wasser auf .Siedetemperatur. Über die Boh rung 46, Rohr 3i2', Bohrung 3,0, Nute G, Ka- nal 24' und Rohr 28 entweicht -der im Mess- gla,s 41 aufsteigende Dampf. Ist -der Koch prozess beendet, stellt man Hebel 16 auf Raste 34, Fig. 6.
Der Dampf strömt jetzt vom Dampfkanal 22 über die offene Nut 6, Boh rung 30, Rohr 32, Bohrung 40 von oben in das Messgefäss 41 und drückt den fertigen Kaffee durch die Bohrung 21, 20 über Nute 7, Bohrung 18 und 19 in ein auf den verstell baren Tassentisch 95 (Fig. 7) gestelltes Ge fäss oder in eine Kanne; das Kaffeemahlgut wird also ein zweites Mal vom Brühwa6ser bestrichen.
Bei Verwendung eines Vorratsbehälters oder mehrerer, wie beim zweiten Ausifüh- rungsbeispiel nach Fig. 7, wird der Auslauf 19, mittelst Mehrweghahn 72 durch Rohr leitungen 7'3, 73' mit den Vorratsbehältern 74, 74' und mit 74" :durch Rohr 112 ver bunden, so, dass Kaffee für Stosszeiten auf Vorrat gebrüht werden kann. Stellt man den Hebel 75 des Mehrweghahnes 72 senkrecht nach unten, so lassen sich noch Einzel portionen Kaffee oder Kaffee Hag direkt in Tassen herstellen.
Wenn auf Vorrat gebrüht wird, ist auch nur mit einem Vorratsbehälter auszukommen, weil Kaffee immerzu, unabhängig vom Stand des Inhalts im Vorratsbehälter, in der Kaffeebrüh- und Koehvorri.chtung bereitet und in den Vorratsbehälter geleitet werden kann, auch während des Abzapfens am letz teren, weil .der Kaffee fertig gemischt in denselben gelangt.
Auch lassen sieh mit dieser Brühvorrieh- tung beispielsweise 6 Tassen auf einmal :brühen, und wenn der Hebel 161 auf Raste 34 .steht (Fig. 6) können die 6 Tassen der Reihe nach am Auslauf 19 beziehungsweise 19' gefüllt werden, und alle Tassen sind mit gleich starkem. Kaffee beschiokt, nicht wie bei den bekannten Brüharmaturen, dass die erste Tasse sehr starken Kaffee und die letzte sehr dünnen erhält.
Wenn. das Messglas.41 leer ist, stellt man Hebel 16 auf Anschlag 33, Fig. 3, wodurch der Überdruck im Messglas 41 über Bohrung 21, 20, Nute 7, Entlüf tungskanal 24 und -Rohr 28 ins. Freie ent- weichen kann. Nun wird mittelst Handrad 55 aufgesohraubt, der Siebhalter 35 heraus genommen und zu neuer Beschickung vor bereitet.
Zur Bereitung eines ausgesprochenen Egpresskaffees wird in umgekehrter Reihen folge gebrüht. Nach Beschickung mit Kaffee mehl stellt man den Hebel 16 auf Raste 34' (Kochstellung) Fig. 5. Das Mahlgut wird also nun zuerst vom Dampf, d--r eine höhere Temperatur als 95 Grad Celsius besitzt, ge brüht, dann stellt man Hebel 16 auf An schlag 33' bis: die gewünschte Kaffeemenge eingeströmt ist, hierauf stellt man Ent leerung, Fig. 6, dann auf Null Fig. 3.
Bei vorliegender Erfindung wird die Qualität des fertigen Kaffees stets gleich, einerlei ab eine, zwei oder mehr Tassen in einem Brühgang gebrüht werden, weil die Brühdauer immer gleich lang und unabhängig von der Filter- siebfläche ist.
In Fig. 7 ist zum Beispiel eine komplette Kaffeemaschine in :der Vorderansicht dar gestellt. In der Mitte des Boilers. 3 sitzt die Brüharmatur, wie auch aus Fig. 1 ersichtlich, jedoch tritt an Stelle des einfachen Auslaufes 19 der Dreiweghahn 72 mit Auslauf 19' und Hebel 75. Rechts und links vom Boiler 3 sitzen auf Armen 76, 76' 76" und 76"' die Vorratsbehälter 74, 94', 74" und Milchbehäl ter 74"'. Die Gruppierung, ebenso die An zahl der Vorratsbehälter kann ganz den Be dürfnissen angep.asst werden, die Arme 7,6, 76"' sind abnehmbar.
Der Boiler 3 ist am obern Ende mittelst Deckel 77, an welchem das Teewasserent- nahmeventil 78 und Dampfventil 78' sitzen, durch eine in der Mittelase des Boilers lie gende Schraube, welche am Boden des Boilers verankert ist, dicht verschlossen. Durch Lö sen der Deckelschraube hebt sich der Deckel von seiner Sitzfläche ab und kann ohne Ge waltanwendung abgenommen werden, so dass das Boilerinnere vom Wasserstein leicht zu reinigen ist.
Das untere Ende des. Boilers: 3, welcher auf dem zylindrischen Teil 79 ruht, ist als ringförmiger Heizsack ausgebildet. Der Ring- raum 80 ist mit Wasser gefüllt und hat den Zweck, einerseits -die Heizfläche zu ver grössern, und anderseits das tote Wasser auf ein Mindestmass zu beschränken, wodurch die Anheizzeit wesentlich verkürzt und das Nutzwasser fast stets erneuert wird, was auf die Qualität des Kaffeegetränkes grossen Einfluss hat.
Die Heizgase des Brenners. 8:1 erhitzen den über demselben liegenden Hohl raum<B>-</B>und die Wärme wird von der innern Ringwandung 82 an das Wasser abgeleitet. Die Abgase' bestreichen in der Pfeilrichtung die äussere Ringflächo 83' und :entweichen durch die Schlitze, 84 ins Freie. Damit .die Heizgase möglichst dicht an der Ringfläche 83 vorbeistreichen, ist ein Schutzmantel 85 eingebaut, welcher zugleich eine zu starke Erhitzung des Fussteilers 79 verhindert und isolierend wirkt.
Bei elektrisch beheizten Maschinen nimmt .die äussere Ringfläche 83 die Bandelemente und die innere Piingfläehe 82 die Spreiz- elemente auf.
Die Gaszuleitung 86 führt über die in be kannter Ausführung gehaltene automatische Gasregelung 87, Rohr 88 zum Brenner 81. Die Leitung 89 ist mit dem Boiler 3, verbun- .den, wodurch die Gaszufuhr entsprechend ,dem Druck im Boiler gesteuert wird. Durch Schraube 90 kann der Druck des Boilers re- guliert werden. Die Schraube<B>9'1</B> dient zur Einstellung der Gasdüse, damit die Ver brennung am Brenner 81 vollkommen ist.
Bei- 92 tritt das Speisewasser über Ventil <B>93</B> und Steigrohr 94 im Boiler 3.
Die Vorratsbehälter 74, 74' und 74" sind doppelwandig und vom Boiler 3 aus mit Dampf durch Ventil 96 beziehungsweise 96' und Rohr 97 beziehungsweise 97' regelbar beheizt. Das innere, den Kaffee fassende Ge fäss 98 ist aus hitzebeständigem Spezialglas und wird mittelst axialer Rohrschraube 99, Dichtungsring 100, 101, Druckring 102, Deckel 103, Schraube 104 gegen :das Aus laufstück 105 und den äussern Behälter 106 abgedichtet.
Mit der Schraube 10,7 wird das Auslaufstück 105 auf dem Arm 76 befestigt und gleichzeitig mittelst Ring 108 und Dich- tun:g 109 der untere \.heil des Mantels 106 mit 105 abgedichtet, dadurch kann auch die ra diale Lage des Zapfhahnes 116, 117 beliebig gestellt werden. Das Rohr 110 führt das Kondenswasser ab.
An der Schraube 107 sitzt ein T-:Stück <B>111,</B> von w elchem eine Leitung 73 zum Drei weghahn 72 der Brüharmatur und eine Lei tung 112 zum Vorratsbehälter 744" führt, so dass die nebeneinander sitzenden Vorrats behälter .durch die Kaffeezuleitung unter sich verbunden sind.
Das untere Ende der Rohrschraube 99 ist, fest in 105 eingeschraubt. Am obern Ende sind Löcher 113 vorgesehen, welche über dem Sitz der Ventilspindel 114 liegen. Am Deckel 1.0,3 sind Lüftungslöcher 115 angeordnet.
Der Zapfen 116, 117 ist mit Teil 105 ver schraubt; am Teil 116 ist in bekannter Weise das Flüssigkeitsstandglas 125 angebracht. Ventilsitz 118 und Kegel 119 sind kugel förmig ausgebildet, damit schon bei leichtem Druck auf den Hebel 120, ein dichter Ver schluss gewährleistet wird. Das Gewinde der Spindel 121 ist ausserhalb der Stopfbüchse angeordnet, so dass zum Reinigen des Hahn kanals 122, 122' mittelst Hebel 120 die Spin del 12.1 herausgeschraubt und herausgezogen werden kann.
Die Spindel 121 ist vorn am Sitz abgerundet und der Kegel 119 kleiner im Durchmesser als die Spindel 121, damit dieselbe sich mühelos wieder einführen lässt.
Beim Vorratsbehälter 74"', welcher für Milch bestimmt ist, fällt der leichteren Rei nigung wegen, die axiale Rohrschraube 99 (in 74 sichtbar) weg; der Abdichtungsdruck wird mittelst zweiteiligem Ring 123 und Schrauben 124 auf den Ring 102"' über tragen und so die Abdichtung bewirkt. Der Deckel 10'3"' ist abnehmbar, und der Flüssig keitsstand 125 fällt fort.
Der eigentliche Brühvorgang ist schon eingangs ausführlich erläutert. Soll nun der linke Vorratsbehälter 74' gefüllt werden, so ist nach Beendigung des Kochprozesses in der Brüharmatur der Hebel 75 des Dreiweghahnes 72 nach links, wie aus Fig. 7 ersichtlich, zu stellen und wenn Ventil 114' geöffnet ist, fliesst -.er Kaffee über Rohr 73' in den Vor ratsbehälter 74'.
Wird der Hebel 75 nach unten gestellt, so lassen sieh Einzelportionen mit der Brüh armatur, zum Beispiel Kaffee Hag, direkt in Kannen oder Tassen herstellen.
Stellt man den Hebel 75 nach rechts, so können die Behälter 74. 74" der Reihe nach oder (zum Teil) gleichzeitig gefüllt werden. Es fliesst erst Kaffee in die Behälter, wenn Ventil 11;4 beziehungsweise 114" geöffnet sind. Der Kaffee fliesst also über Rohr 73 zum T-Stück 111 -und Rohr 99 durch die Öff nungen 11:3 in :den Vorratsbehälter 74; .das @Tentil 114 muss offen sein.
Durch diese An ordnung der Kaffeezuleitung in die Vorrats behälter kann es nie vorkommen, dass durch das beim. Ausserbetriebsetzen der Kaffee maschine im Boiler 3 entstehende Vakuum, der noch in einem Vorratsbehälter sich be findende Kaffee durch irgendwelche Um stände in den Boiler gesaugt wird.
liaffe machine with coffee brewing and coffee maker. The invention relates to a coffee machine with a novel brewing and cooking device, which is intended for cafes, Ho means and restaurants. There are already a number of coffee machines on the market for the above-mentioned purpose, but they work almost exclusively according to the express system, with the exception of the so-called scalding machines; however, the latter are not considered for comparison because of their inefficiency.
With the express system, the ground coffee is sealed in a so-called brewing sieve, in which the filter surface must be adapted to the amount of coffee ground, with a suitable brewing fitting. It is closed and hot water and steam are alternately supplied to it from a pressurized boiler, which is pressed through the ground coffee. The temperatures that occur are well above the boiling point and fluctuate between 109 degrees and 118 degrees Celsius.
At brewing water temperatures that are so far above the boiling point of the water, however, a flawless, clear and aromatic coffee drink cannot be achieved because this also removes the bitter substances and colloids contained in the coffee and makes the finished drink cloudy and bitter ; the food to be brewed is overheated. If a coffee made in this way is left to stand for some time, it becomes unsightly gray, cloudy and almost inedible.
The present invention operates in a different manner and permits many innovations over other systems, as the following description shows.

The brewing fitting housing 1 is tightly connected by means of nut 2 in a known manner to a hot water generator 3 under steam pressure. At the free end of the housing 1, the piston 4 is mounted with a sealing disk 5 secured against rotation by a pin 8 by means of stuffing box parts 10, 11, 1'2, 13, 14, 15i .
16 is .the B. rüh- lever, which is firmly connected to .the shaft of the piston 4. The spring 9 presses the sealing washer 5 firmly against the flat turn of the housing 1. The sealing disk 5 has an outwardly open groove 6 and a closed groove 7.
The pin 17, which sits on the lever 16, limits the angular stroke by means of stops 33 and 33 '; the lugs 34 and 34' are notches for the intermediate positions of the lever 16, or the pin 17, respectively.
From the flat recess of the Ge housing 1, seven holes go in the axial direction; the centrally: seated bore 20 opens into the radially upward-going bore 21, which leads to the brewing vessel; the bore 18 opens into the outlet bore 19; Hole 22 is continuous and ends in the steam manifold 26, bore 25 connec det bore 22 with 23, or also 23: through manifold 26 with the steam space of the boiler 3; 22 and 23 are the steam channels. Bore 24 and 24 'both terminate in vent tube 28; Channel 3.1 is continuous like bore 22. and opens into. The downward going water elbow 27; So 31 is the water channel.
The bore 30 leads to the resilient tube 32 via connection stub 47, bore 46, and opens into the dimension space of the glass 41.
The sieve holder 35, which can be removed by means of a handle 6-0, is tightly closed between the two sealing rings 29 and 39;
the pressing takes place by means of handwheel 55, which: is connected by the screw 5.8 with the square 56 of the threaded sleeve 50, the latter is rotatable in the eye 51 or on the crossbars 51 (Figs. 1, 2 and 7), which are connected by connecting rods 52 , 52 ', nuts 53, 53' and eyes 57, 57 'are firmly connected to the brewing fitting 1. The threaded shaft 49 forms one piece with 43 and is sealed with cover 42 by sealing ring 45, closed.
If the hand brace 55 is turned in the pressing direction, the fixed thread 49 presses the cover 42 downwards. The pressure is transmitted via sealing ring 3-8 to glass 41, sealing ring 37 and socket 36, further to seal 39, screen holder 3 ': 5 and sealing ring 2: 9.
The measuring glass 41 is held in the middle of the rod 44 and nut 63 when the sieve holder 35 is removed.
