The present invention relates to activated globular protein preparations, a method for obtaining such preparations and use in edible compositions. In particular, the present invention relates to use of activated globular protein as a gelling agent, thickening agent, emulsifying agent, stabilizing agent, foaming agent, protein supplement and / or gelatin substitute.
