a presente invenção refere-se a composições para o preparo de uma bebida, sendo que as composições compreendem: a) um extrato de café líquido ou café seco na faixa de 1 a 40% p/p; b) um formador de cremosidade na faixa de 1 a 20% p/p;c) um modificador de viscosidade na faixa de 1 a 15% p/p; d) um emulsificante na faixa de 0,1 a 1%; e e) uma ß-mananase na faixa de 0,1 a 1% p/p.
