a presente invenção refere-se a xilanases gh10 ou um fragmento das mesmas, incluindo enzimas xilanases modificadas, todas tendo atividade de xilanase, em que a enzima ou fragmento da mesma fornece maior recuperação de óleo a partir de um material à base de grãos em comparação com uma enzima xilanase gh10 original ou de controle, a xilanase gh10 original tendo sido modificada em ao menos uma ou mais das seguintes posições 7, 25, 33, 64, 79, 89, 217 e 298, em que a numeração tem por base a numeração de aminoácidos da fvexyn4 (seq id no. 1). a invenção refere-se também a métodos de uso das xilanases gh10, por exemplo, para recuperação de óleo aprimorada.
