Abstract

"PROCESSO PARA PRODUZIR UMA XANTOFILA MONO- OU POLI-OXIDADA". A presente invenção refere-se a um processo para a preparação de uma xantofila, e em particular a um processo para a preparação de uma xantofila por oxidação de um carotenóide na presença de peróxido de hidrogênio e de um composto contendo iodo. Em particular, o processo da invenção utiliza a oxidação de beta-caroteno para produzir cantaxantina, e a oxidação de luteína ou de zeaxantina para produzir astaxantina.
