Abstract

"USO DE CONSERVANTE CATIÈNICO EM PRODUTOS ALIMENTìCIOS". A presente invenção refere-se a um novo uso de conservantes catiónicos e a preparações de acordo com esse novo uso. Um conservante catiónico derivado de ácido láurico e arginina, em particular o éster etílico da lauramida do monocloridrato de arginina, daqui por diante denominado LAE, pode ser usado para a proteção contra o crescimento de microorganismos. A estrutura química do LAE é descrita na seguinte fórmula: LAE e compostos afins são particularmente adequados para serem usados na conservação de todos os produtos alimentícios perecíveis. é preferido dissolver o composto diretamente antes do uso em um dos seguintes solventes preferidos de grau alimentício: água, etanol, propileno glicol, álcool isopropílico, outros glicóis, misturas de glicóis e misturas de glicóis e água. Se o tratamento será realizado sob um valor específico de pH, o uso de uma solução tamponada correspondente poderá ser recomendável. A composição opcionalmente compreende componentes auxiliares e excipientes. Esses componentes auxiliares e excipientes podem ser agentes de espessamento (por exemplo, goma de xantano, goma guar, amidos modificados), agentes antiespuma (por exemplo, dimetilpolissiloxano, dióxido de silício), produtos para obter o valor de pH ótimo (por exemplo, fosfatos, tartaratos, citratos, lactatos), agentes de coloração (por exemplo, curcumina, tartrazina, eritrosina) e produtos de aroma. é preferido que a composição de conservante compreenda LAE em uma quantidade de 0,0001% a 1% em peso em relação ao peso total da composição de conservante. é particularmente preferido usar a composição inventiva para a conservação de produtos de carne, como por exemplo carne, produtos de aves domésticas, peixe, crustáceos, hortaliças, verduras, emulsões, molhos, produtos de confeitaria, produtos de panificação, alimentos pré-cozidos, alimentos prontos para servir, produtos derivados do leite, produtos à base de ovos, geléias, gelatinas, bebidas, sucos, vinhos e cervejas.
