Abstract
This invention is a method for manufacturing a chocolate article with theappearance of a French fry, specified by the following steps: a mould isused which has two elongated halves; a liquid mixture of half milk chocolateand half cocoa butter is injected onto the walls of this mould, in a thinlayer, and after the previously mentioned chocolate layer has set, meltedwhite chocolate is injected onto the wall of the mould and the two halveswhich have been created are subsequently filled with so-called praline andadjoined.

Deze uitvinding heeft betrekking op een werkwijze voor het vervaardigen van een chocoladeartikel met het uiterlijk uitzicht van een friet of dergelijke.
Het doel van de uitvinding is een werkwijze te ontwerpen waardoor een chocoladeprodukt ontstaat dat het uitzicht vertoont van een friet en dat op industriële schaal door klassieke middelen kan worden vervaardigd.
Het nabootsen van deze produkten door gebruik te maken van z. g. witte chocolade of cacaoboter leidde tot een mislukking. De uitvinding heeft dan ook zeer specifiek tot doel een werkwijze in meerdere stappen voor te schrijven die leidt tot een perfekte nabootsing van frieten.
Om dit volgens de uitvinding mogelijk te maken, gaat men conform de uitvinding als volgt te werk : 1. Men maakt voor elke friet gebruik van een uit twee langwerpige helften bestaande moule ; 2. Men spuit, inwendig onder vorm van een dunne film, op de wand van deze moule een vloeibare samenstelling bestaande voor de helft uit melkchocolade en voor de helft uit cacaoboter ; 3. Na verharding van hogerbedoelde dunne film wordt in de moule gesmolten witte chocolade tegen de wand van de moule gemouleerd.

4. In een volgende fase worden de ontstane uit witte chocolade bestaande helften met z. g. praliné gevuld.
5. In een laatste fase worden de twee met praliné gevulde helften onder elkaar verbonden.
Andere details en voordelen van de uitvinding zullen blijken uit de hierna bij wijze van voorbeeld gegeven beschrijving van een werkwijze voor het vervaardigen van een chocolade-artikel met het uiterlijk uitzicht van een friet en aldus bekomen chocolade-artikel.
De werkwijze volgens de uitvinding heeft tot doel een hoofdzakelijk uit witte chocolade bestaand produkt dat een duidelijke gelijkenis vertoont met een friet.
Gebleken is dat dit niet kon bekomen worden door gewoonweg de friet uit witte chocolade, t. w. cacaoboter te vervaardigen. Het uiterlijk aspect van een dergelijk produkt biedt de gewenste gelijkenis niet. Aanvrager heeft nu een werkwijze op punt gesteld waardoor een chocoladeprodukt met een sterke gelijkenis met frieten kan worden bekomen mits de verder beschreven stappen te volgen.
Wanneer hierna over een moule wordt gesproken, gaat het omwille van de industriële produktie bij voorkeur om een moule bestaande uit twee onderdelen die elk uit een plaat bestaan waarin in de diepte en in de langsrichting de indruk van een halve friet is geproduceerd.
Men vertrekt dus van twee halve moules die, wanneer zij op elkaar zijn gelegd, twee halve frieten in de langszin vertegenwoordigen. op beide halve moules wordt nu inwendig een dunne film gesmolten chocolade gespoten samen met gesmolten cacaoboter. De gespoten dunne film ontstaat dus dcor het spuiten van een dunne laag van een vloeibare samenstelling op basis

van vloeibare chocolade, bij voorkeur melkchocolade en vloeibare cacaoboter.
De filmlaag hoeft uiterst dun te zijn en de bedoeling ervan is het uiterlijk aspect van een friet te doen ontstaan. De dunne film heeft een lichtbruine kleur en is dus beter geschikt om het uiterlijk aspect van een gebakken friet na te bootsen dan wel zuivere witte chocolade of cacaoboter.
In een volgend stadium wordt over de dunne film die aan de binnenwand van de moule kleeft gesmolten cacaoboter gemouleerd. Dit kan gebeuren door beroep te doen op klassieke technieken. De moule kan hierbij nog worden getrild. Wanneer de gesmolten cacaoboter is verhard, worden de twee helften met een pralinécompositie gevuld en worden dan ook deze twee helften onder elkaar verbonden.
Meerdere bekende werkwijzen zijn in het vak bekend om deze helften, behorende tot de twee moules, onder elkaar te verbinden.
Het afgewerkt produkt gelijkt opvallend op een friet en dit is te danken aan de onregelmatige bruine verkleuring als gevolg van het op de mouleonderdelen spuiten van een vloeibare samenstelling bestaande voor de helft uit melkchocolade en voor de helft uit cacaoboter.
Voor het overige heeft het chocoladeartikel ter nabootsing van frieten ook een gewicht dat normaal aan het gewicht van een friet herinnert en het produkt is omwille van de vulling ook stevig zonder hierbij te moeten gebruik maken van een overdreven hoeveelheid witte chocolade of cacaoboter.
De uitvinding is niet beperkt tot de hierboven beschreven uitvoeringsvorm en vele wijzigingen zouden hieraan kunnen worden aangebracht zonder buiten het raam van de aanvrage te treden.

This invention relates to a method of manufacturing a chocolate article with the appearance of a French fry or the like.
The object of the invention is to design a method by which a chocolate product is produced which has the appearance of a fries and which can be manufactured on an industrial scale by classical means.
Mimicking these products using z. G. white chocolate or cocoa butter led to failure. The invention therefore has a very specific object to prescribe a multi-step method which results in a perfect simulation of French fries.
To make this possible according to the invention, proceed according to the invention as follows: 1. For each chip, a mold consisting of two elongated halves is used; 2. Internally in the form of a thin film, a liquid composition consisting of half of milk chocolate and half of cocoa butter is sprayed on the wall of this mold; 3. After the above-mentioned thin film has hardened, molten white chocolate is molded in the mold against the wall of the mold.

4. In a next phase, the resulting halves of white chocolate with z. G. praline filled.
5. In a final phase, the two halves filled with praline are joined together.
Other details and advantages of the invention will become apparent from the exemplary description hereinafter of a method of manufacturing a chocolate article with the appearance of a chip and thus obtained chocolate article.
The object of the method according to the invention is a product mainly consisting of white chocolate which bears a clear resemblance to a French fry.
It turned out that this could not be achieved by simply fries from white chocolate, t. w. to manufacture cocoa butter. The appearance of such a product does not provide the desired resemblance. The applicant has now developed a method by which a chocolate product with a strong resemblance to French fries can be obtained, provided that the steps described further are followed.
When reference is made hereinafter to a mold, for the sake of industrial production it is preferably a mold consisting of two parts, each of which consists of a plate in which the impression of half a chip is produced in the depth and in the longitudinal direction.
Thus, one starts from two half molds which, when placed on top of each other, represent two half chips in the longitudinal sense. a thin film of melted chocolate is now internally sprayed on both half molds together with melted cocoa butter. of liquid chocolate, preferably milk chocolate and liquid cocoa butter.
The film layer does not have to be extremely thin and its purpose is to create the appearance of a fries. The thin film has a light brown color and is therefore better suited to mimic the appearance of a fried fries or pure white chocolate or cocoa butter.
In a subsequent stage, molten cocoa butter is molded over the thin film adhering to the inner wall of the mold. This can be done by using classic techniques. The mold can still be vibrated. When the melted cocoa butter has hardened, the two halves are filled with a praline composition and these two halves are then joined together.
Several known methods are known in the art for joining together these halves belonging to the two molds.
The finished product strikingly resembles a French fry and this is due to the irregular brown discolouration as a result of the spraying on the molded parts of a liquid composition half of milk chocolate and half of cocoa butter.
Otherwise, the fries-imitating chocolate article also has a weight normally reminiscent of the weight of a fries, and because of the filling, the product is also firm without having to use an excessive amount of white chocolate or cocoa butter.
The invention is not limited to the above-described embodiment, and many modifications could be made to it without departing from the scope of the application.
