Verfahren zum Kennzeichnen von Wurst. und Fleischwaren.
Den Gegenstand der Erfindung bildet ein Verfahren zum Kennzeichnen von Wurst-und Fleischwaren mittels auf diese vor dem Räuchern aufgeklebten Kennmarken, die sich beim nachfolgenden Kochen ablösen oder auflösen, so dass auf den Waren ein Zeichen zurückbleibt, aus welchem die Herkunft der Waren erkennbar ist.
An sich ist es z. B. bekannt, auf Früchten Buchstaben, Namenszüge u. dgl. anzubringen, indem eine Schablone aus elastischem und gleichzeitig schmiegsamem Material auf der Frucht mittels eines Bandes befestigt wird, worauf die Sonnenstrahlen die freien Stellen röten, während die bedeckten Stellen blass bleiben. Dieses Verfahren lässt sich jedoch für der Konservierung unterliegende Wurst-und Fleischwaren nicht anwenden und hat ausserdem den Nachteil, dass sich die Schablonen auf den Früchten verschieben können, wodurch undeutlich Kennzeichen entstehen.
In der Zeichnung ist beispielsweise ein Würstchen dargestellt, auf welches eine Kennmarke aufgeklebt ist.
Als Kennmarken können Papierblättehen, Gelatineplättehen oder Oblaten benutzt werden.
Zweckmässig werden gelochte Kennmarken verwendet, welche als Durchlochung das Kennzeichen des Herstellers tragen. In der Zeichnung bedeutet a eine aufgeklebte Kennmarke und b die gelochten Stellen derselben. An Stelle eines Buchstaben kann auch ein Warenzeichen od. dgl. benutzt werden. Papiermarken lösen sich beim Kochen von den Wurst-oder Fleischwaren ab, während sich Gelatineplättehen und Oblaten im Kochwasser auf] ösen. Ausser für Dosenware kann die Kennzeichnung auch für frisch geräucherte Waren erfolgen. Wenn als Kennzeichen ein Kreuz, Stern od. dgl. benutzt wird, ist die Lochung der Kennmarken nicht erforderlich.

Perforated identification marks are expediently used, which bear the manufacturer's mark as a perforation. In the drawing, a denotes a glued-on identification mark and b denotes the perforated areas of the same. A trademark or the like can also be used instead of a letter. Paper tokens come off the sausage or meat products during cooking, while gelatine plates and wafers dissolve in the cooking water. Except for canned goods, the labeling can also be applied to freshly smoked goods. If a cross, star, or the like is used as the identifier, the perforation of the identifier is not required.
