Abstract

Se divulga un método para preparar carbohidratos protegidos de la degradación ruminal para su uso en alimentos para rumiantes mediante la inducción de la reacción de Maillard entre una fuente de carbohidratos reductores y una fuente de proteínas en condiciones de presión reducida. También se divulgan productos elaborados mediante este proceso y métodos para mantener o restablecer niveles de glucosa en sangre hasta dentro del rango de referencia normal para rumiantes, especialmente durante la transición o bajo estrés por calor.
