Abstract
Se proveen productos cárnicos mejorados y métodos para producir estos productos cárnicos por medio de la incorporacion incrementada de grasas saludables que contienen ácidos grasos beneficiosos, tales como ácido estearidonico (SDA). Además, en diversas realizaciones, se proveen métodos para producir estos productos que incluyen pasos tales como fa reduccion del contenido de grasa saturada mediante la cría y/o empleando técnicas de procesamiento de carne. En algunas realizaciones, el producto cárnico terminado tiene un mayor contenido de grasa que el tejido cárnico inicial, con las mejoras correspondientes en el sabor y la textura, y también con beneficios mejorados para la salud del consumidor.
