Abstract

Las materias primas que se usan en la elaboración de la golosina de soja son: soja pre-tratada (20,6 %), maní (20,6 %), azúcar (35,5 %), glucosa (8,8 %) aceite vegetal hidrogenado (14,5 %) esencia de vainilla. La fabricación de la golosina consiste básicamente en una pulverización de los granos (refinado), mezclado con los otros ingredientes y nueva pulverización, prensado y envasado. La composición centesimal de la golosina de soja resultó: hidratos de carbono 47,04 %; lípidos 30,26 %; proteínas 17,20 %; fibra bruta 1,29 %; cenizas 1,25 %; humedad 2,96 %.The raw materials used in the elaboration of soy candy are: pre-treated soy (20.6%), peanut (20.6%), sugar (35.5%), glucose (8.8%) hydrogenated vegetable oil (14.5%) vanilla essence.
