Abstract

Una enzima celobiohidrolasa (CBH) con actividad mejoradora de pan se utiliza en la preparacion de pan. Los efectos más importantes de dicha enzimason el volumen de pan mejorado y la estructura de la miga mejorada. Se describe una composicioncon actividad mejoradora de pan que comprende celobiohidrolasade una cantidad efectiva. La CBH es de origen microbiano, más preferiblemente de origen micotico. El uso de CBH en una composicion es para mejorar: (i) laspropiedades de manejo de unama sa; (ii) el volumen de pan, y/o (iii) la estructura de la miga de pan, y para actuar sobre los polisacáridos en la paredcelular en la harina de trigo. Una masa es adicionada de una composicion mejoradora del pan que comprende porlo me nos 0,5 mg, preferiblemente por lomenos 5 mg de CBH por kg de harina. Otro objeto de la solicitud es reivindicar un proceso para producir dicha masa.
