Abstract

PURPOSE: To raise nutritive effect of ice cream without causing the reduction in its quality, by using a liquid oil containing a large amount of unsaturated fatty acid as fats and oils for ice cream and fatty acid ester of sucrose as an emulsifying agent.
CONSTITUTION: A liquid oil being fats and oils, e.g., cotton seed oil, sesame oil, colza oil, corn oil, peanut oil, safflower oil, etc., containing usually ≥40wt% unsaturated fatty acid, e.g., linoleic acid, linolenic acid, oleic acid, etc., or the fats and oils are subjected to ester exchange reaction to give fats and ols containing a large amount of the unsaturated fatty acid. These fats and oils as fats and oils for ice cream are added to common aw ingredients for ice cream. In the operation, 0.05W5wt% fatty acid ester of sucrose as an emulsifying agent is added to ice cream.
