Abstract
Description
本出願は、参照により本明細書に全体として組み込まれる2010年9月8日に出願された米国仮出願第61/380,942号の利益を主張する。技術分野は、高固形物の濃縮乳製品、さらに具体的には少なくとも約38%の全固形物を有する濃縮乳など、非ゲル化性、非褐変性で官能的に好ましい高固形物の濃縮乳製品、およびそれを製造する方法に関する。

L=温度Tにおける特定の微生物の致死率。
次に、各小時間増分の上記で算出された致死率の値に時間増分を掛け、次いで次式を用いて、合計して、滅菌値(F0)を得る:
Fo=(tT1)(L1)+(tT2)(L2)+(tT3)(L3)+...
式中:
tT1,tT2,...=温度T1、T2、...における時間増分;
L1,L2,...=時間増分1、時間増分2、...致死率の値;
F0=微生物の121℃における滅菌値。
したがって、侵入曲線が生成されると、工程の滅菌値F0は、任意の温度における工程時間の長さを基準温度121℃(250°F)における等価な工程時間に変換することによって算出することができる。滅菌値の算出は、本明細書に全体として組み込まれる非特許文献2に概括的に記載されている。
Claims (10)
- 38から50重量%の全固形物を有する、レトルト安定性を示す乳製品濃縮物であって、
無脂乳固形物、タンパク質、糖、および脂肪を含む、38から50重量%の全固形物、
26重量%までの重量の前記無脂乳固形物、
0.5から0.9の前記脂肪の重量に対する前記タンパク質の重量、
20から30重量%の量の前記糖、
前記乳製品濃縮物が0.5から33TpHの相分離速度を示す、少なくとも1:1から3.5:1の乳製品固形物の重量に対する前記糖の重量、
を含むことを特徴とするレトルト安定性を示す乳製品濃縮物。 - タンパク質の緩衝塩に対する重量比は40から60であることを特徴とする請求項1に記載のレトルト安定性を示す乳製品濃縮物。
- 相透過分離速度は、無脂乳固形物に対する糖の重量が増加するにつれて低下することを特徴とする請求項1に記載のレトルト安定性を示す乳製品濃縮物。
- 相透過分離は、38重量%未満の全固形物を有する乳製品濃縮物の相透過分離より低いことを特徴とする請求項1に記載のレトルト安定性を示す乳製品濃縮物。
- 0.25から2重量%の範囲の重量のラクトースをさらに含むことを特徴とする請求項1に記載のレトルト安定性を示す乳製品濃縮物。
- 38から50重量%の全固形物を有するレトルト安定性を示す乳製品濃縮物であって、
無脂乳固形物、タンパク質、糖、および脂肪を含む38から50重量%の全固形物と、
26重量%までの重量の前記無脂乳固形物と、
20から30重量%の量の前記糖と、
0.07から56の範囲のタンパク質の脂肪に対する重量比と、
前記タンパク質の脂肪に対する重量比に対する糖の重量比であって、前記重量比が低下するにつれて、前記乳製品濃縮物が、式TpH=−0.0017重量比2−1.0259重量比−12.951によって特徴付けられる減少する相分離速度(TpH)を示し、前記乳製品濃縮物がレトルト条件を経験した後も均質な流体のままである重量比、
を含むことを特徴とするレトルト安定性を示す乳製品濃縮物。 - タンパク質の脂肪に対する重量比は、0.5から0.9であることを特徴とする請求項6に記載のレトルト安定性を示す乳製品濃縮物。
- タンパク質の緩衝塩に対する重量比は40から60であることを特徴とする請求項6に記載のレトルト安定性を示す乳製品濃縮物。
- 40から50重量%の全固形物を有するレトルト安定性を示す乳製品濃縮物であって、
無脂乳固形物、タンパク質、糖、および脂肪を含む38から50重量%の全固形物と、
1から11重量%の乳製品タンパク質および0.25から2重量%のラクトースを含めて、30重量%までの重量の前記無脂乳固形物と、
10から30重量%の量の前記糖と、
40から60のタンパク質の緩衝塩に対する重量比と、
0.5から0.9の脂肪に対するタンパク質の重量比と、
前記乳製品濃縮物がレトルト条件を経験した後も均質な流体のままであり、10TpH以下の相分離速度と、
を含むことを特徴とするレトルト安定性を示す乳製品濃縮物。 - 緩衝塩は、リン酸モノナトリウム、リン酸ジナトリウム、クエン酸トリナトリウム、およびそれらのブレンドを含む群から選択されることを特徴とする請求項9に記載のレトルト安定性を示す乳製品濃縮物。
