Abstract
1461674 Alcohol impregnated candied fruits ETABS L BRETON & FILS SA 1 April 1974 [30 March 1973] 14405/74 Heading A2B Fruit, including cherries, chestnuts and citrus peel, is steeped in water and then in a syrup both at 50-60‹C until the sugar concentration in the fruit reaches 78-88‹ Brix, and after cooling to ambient temperature steeped in alcohol for 2-10 days whilst continually stirring until the sugar content, has been reduced in degrees Brix by an amount equal to the % by volume of the alcohol in the solution. The reduction is preferably 3-10‹ Brix.
