A method of producing frozen fish fillets of flatfish such as plaice, comprises the steps of cutting from the skin and the bones of each fish an under fillet and an upper fillet of substantially identical contours, allowing the pair of fillets cut from each fish to drain until they are in a slightly moist state, placing the pair of fillets of each fish together with the sides thereof from which the bones have been cut facing each other and with the base of the tail of the upper fillet lying exactly on top of the base of the tail of the under fillet, compressing the pair of fillets to expel air from between the fillets, and subsequently deep-freezing each pair of fillets just for sufficient time to allow the whole mass of fish of each pair of fillets to be thoroughly frozen and form an integral unit that is in the form of a bonefree fish. The freezing step may be carried out in a refrigerated tunnel, the pairs of fish fillets being subjected, in the tunnel, to a temperature of the order of 35‹C. below zero for a period of time of the order of two hours. After freezing, the pairs of fish fillets may be beaten slightly and covered with a layer of bread crumbs.
