背景技术
土茯苓:百合科多年生常绿攀缘状灌木,《本草正义》记载:土茯苓,利湿去热,能入络,搜剔湿热之蕴毒,其解水银、轻粉毒者,彼以升提收毒上行,而此以渗利下导为务,故专治杨梅毒疮,深入百络,关节疼痛,甚至腐烂,又毒火上行,咽喉痛溃,一切恶症。《纲目》记载:健脾胃,强筋骨,去风湿,利关节,止泄泻。治拘挛骨痛;恶疮痈肿。解汞粉、银朱毒。现代医学研究,土茯苓根茎含皂甙、鞣质、树脂等营养物质,具有解毒除湿、活络筋骨、健脾胃等功效。
豆薯,又称凉薯、沙葛,属豆科豆薯属中能形成块根的栽培种,一年生或多年生缠绕性草质藤本植物。豆薯的块根肥大,肉洁白嫩爽多汁营养丰富,富含糖分和蛋白质,还含有丰富的维生素C和人体所必须的钙、铁、锌、铜、磷、晒等多种微量元素,有生津止渴,清凉去热、解酒毒,降血压、血脂等功效,对心血管病都有很好的疗效。
豆薯的生长周期短,且不易贮藏,用于加工成土茯苓豆薯营养细面可实现对豆薯原料的综合利用,可以直接食用,味道鲜美,贮藏时间长,提高其经济价值。

本发明的目的是提供一种土茯苓豆薯营养细面的制作方法,可以直接食用,味道鲜美,贮藏时间长。
本发明解决其技术问题所采取的技术方案是:
一种土茯苓豆薯营养细面的制作方法,其特征在于:采用原料清洗→烘干磨粉→过筛→配料加工→压片→包装为主要加工步骤,具体操作步骤为:
(1)原料处理:选用含蛋白质18%的特制小麦面粉,加入蛋白粉、甘薯粉、赤豆粉,每100千克面粉加蛋白粉、甘薯粉、赤豆粉各2千克;选用新鲜优质豆薯、土茯苓,清水洗净后,去皮及其他杂质,沥水备用;
(2)豆薯粉制作:将豆薯、土茯苓用定向切片机纵向切成薄片,厚度为5毫米,置于烘筛上用电热鼓风机干燥,并放入粉碎机内磨成细粉,过100目筛;
(3)配料加工:在面粉中加入20%的豆薯混合粉,混合均匀后,加入面粉重量的35%赤豆浆、15%黄精粉、6%土枸杞粉和2%魔芋精粉;将混料后的面粉放置和面机中搅拌45分钟后,再将料坯在40℃下放置26分钟,然后上机压片;
(4)压片:熟化的料坯通过双辊压延,将小颗粒面料挤压在一起,形成面皮,再通过双辊压逐步压延,然后经轧条机将面片切成宽1毫米、厚0.3毫米的面条,上架晾干;
(5)包装:将干面条用干净白纸袋分装,即可上市。

具体实施方式
实施例1:
一种土茯苓豆薯营养细面的制作方法,具体操作步骤为:
(1)原料处理:选用含蛋白质22%的特制小麦面粉,加入鸡蛋、豆薯粉,每100千克面粉加鸡蛋20千克,豆薯粉10千克;选用新鲜优质豆薯、甘薯,清水洗净后,去皮及其他杂质,沥水备用;
(2)豆薯粉制作:将豆薯、甘薯用定向切片机纵向切成薄片,厚度为3-5毫米,置于烘筛上用电热鼓风机干燥,并放入粉碎机内磨成细粉,过100目筛;
(3)配料加工:在面粉中加入35%的豆薯粉,混合均匀后,加入面粉重量的40%牛奶、10%甘薯粉、10%玉米粉和5%魔芋精粉;将混料后的面粉放置和面机中搅拌30分钟后,再将料坯在45℃下放置25分钟,然后上机压片;
(4)压片:熟化的料坯通过双辊压延,将小颗粒面料挤压在一起,形成面皮,再通过双辊压逐步压延,然后经轧条机将面片切成宽1毫米、厚0.2毫米的面条,上架晾干;
(5)包装:将干面条用干净白纸袋分装,即可上市。
实施例2:
一种土茯苓豆薯营养细面的制作方法,具体操作步骤为:
(1)原料处理:选用含蛋白质12%的特制小麦面粉,加入鸡蛋、薏苡仁粉,每100千克面粉加鸡蛋10千克,薏苡仁粉2.5千克;
(2)豆薯粉制作:选用豆薯、杏鲍菇及鸡腿菇的破碎鲜菇、残次菇及菇柄作原料,除去泥沙及杂物,并进行清洗,于纱布袋内脱水后,置于烘筛上烘烤,初烤温度为50℃,温度逐级提升,每小时4.5℃,直至温度达到78℃,烘烤与排湿同步进行,当原料含水量降到2-5%时,结束烘烤,放入粉碎机内磨成细粉,过200目筛;
(3)配料加工:在面粉中加入30%的豆薯粉、菇粉,混合均匀后,加入面粉重量的20%牛奶、12%香芋汁、10%甘薯粉和3%魔芋精粉;将混料后的面粉放置和面机中搅拌40分钟后,再将料坯在28-32℃下放置50-60分钟,然后上机压片;
(4)压片:熟化的料坯通过双辊压延,将小颗粒面料挤压在一起,形成面皮,再通过双辊压逐步压延,然后经轧条机将面片切成宽4毫米、厚1毫米的面条,上架晾干;
(5)包装:将干面条用干净白纸袋分装,即可上市。

(1)原料处理:选用含蛋白质18%的特制小麦面粉,加入蛋白粉、甘薯粉、赤豆粉,每100千克面粉加蛋白粉、甘薯粉、赤豆粉各2千克;选用新鲜优质豆薯、土茯苓,清水洗净后,去皮及其他杂质,沥水备用;
