Abstract

Objeto de la invencion: Cepas y fermentos que se los puede utilizar para la obtencion de productos lácteos fermentados a partir de leche a la que seanadiera glucosa. Características de la invencion: Cepas mutantes de L. bulgaricus que llevan unamuta cion falta de sentido, en cuando menos una de lassecuencias que dan codigo del operon lactosa y desprovistas de actividad de B-galactosidasa, y fermentos lácticos que comprenden las mencionadas cepas. Camposde aplicacion: segun lo indicado. Noposee ejemplos ni alternativas.
